Carole - when you do those classes, can you download the videos to watch later or do you have to be connected to the internet the whole time? Our internet is really really slow!!!

Shannon, it is my understanding that yes you can download them to view when you're off line but I thing it is only with apple products. I'm not sure. The class is yours to review any time you want to. Presently re-watching the pasta class. There's so much to learn!

I will look more into downloading and watching later, as we have a Mac. If I can do that, I will start some classes! They have quite the list!!!!

I didn't finish canning all my broth yesterday :( So today I need to finish up my last batch in the canner! I will end up with 19 Quarts of beef broth!!!

Shannon nice job on broth canning.

Today is the day after I grocery shop so my kitchen is busy.

Marked down sliced yellow squash - 1 1/3 lb for $1.60 in the dehydrator. So easy when it's already prepped.

Marked down prepped cauliflower $1.16 - will bake with cheddar cheese.

Assorted pork chops on sale for $1.49lb to bake - dice in food processor for sliders on sour dough bread to freeze.

A carton of chicken livers and a pkg of chicken gizzards to cook for Annie.

Ox tails for broth. It may have to wait until Sat.

Will start jalapeno and palanos peppers for a pepper cream recipe in Preserving Italy cookbook. Today I will prep the peppers, salt and let drain over night to remove liquid. The recipe calls for fresh cayenne and red bell peppers but the store didn't have fresh cayenne only dry so I decided to go with jalapeno and palanos. I really like the taste of both those peppers.

Marked down maple breakfast sausage in oven now. Will freeze most of it.

Shannon, do you use a pressure cooker for processing you broth?

As for the Craftsy class, they often have a sale on classes. I'm really enjoying the cooking classes I bought.

I use a pressure canner that I've had for around 15 years. Goodness I feel old for writing that!

I made the palanos jalapeno cream and used it for the first time yesterday in cream crowder peas. Liked the taste but not enough heat. Next time I will add one dried cayenne pepper to the vinegar and remove it.

This morning I prepped the veggies I bought yesterday - green onion, bok choy, celery, asparagus, yellow & red bell peppers, and poblano pepper.

Getting ready to put a small 8 pound turkey in to roast for tonight. A friend raised turkeys last summer. We got two small ones from them. Can't wait for dinner. Since we had family over at Thanksgiving, I had to purchase a larger one. It's ok though. Don't want any of these two wasted. I can't stand it when someone takes a plate of food and eats part of it and throws the rest out. God provided us with the food and how ungrateful for someone to just throw it out. Besides it cost money and I don't like throwing money away.

Now what to put with it. Mashed potatoes and some vegetables......of course gravy too.

Canning hint from my Preserving Italy book. Citrus seeds have a lot of pectin so collect them; put in cheesecloth and tie with kitchen twine; add to pot to help set jelly, jam, and marmalades.

Marilyn, the book didn't say. Since I don't can on a regular basis I'm planning on freezing them as I collect them. I thought about layering them between wax paper in a freezer container. That way I can use what I need. The book also didn't say how many seeds are needed for a good set. It was more like just add the seeds from the citrus you were using at the time. May have to Google it and see what I come up with.

Right now I have deer fat rendering on the stove. I don't particularly care for the smell of it, but free fat to use in cooking is always a good thing.

Plan on making a batch of sourdough bread tonight as well!

Been scanning my new Irish Country Cookbook and learned a knew word. A knob of butter: about 1 tsp - enough to grease a cake pan. Now to work it into a conversation because it makes me smile every time I think of it.

Having so much fun with my new cookbooks learning so many new things. The Indian woman who wrote the cookbook on curries says our American (Texas) chili is really just another good curry. Got me thinking. Curries are spicy with meat or veg cooked in a sauce. Chili is meat cooked in a spicy sauce. Been eating curry all my life and didn't even know it.

I am being lazy tonight and we will be having leftovers. HOWEVER I do plan to make a loaf of artisan sourdough bread tonight. I'm hoping the "fire tonic" will be done soon - I need to look!!! And I need to make more batches of kombucha and water kefir. I have a list of things I WANT and NEED to do in my kitchen.... but just no energy!

Yesterday I was reading in my Japanese fermenting book and found this little bit of information. Vodka can be used to wipe off mold on fermenting food and jar/lid. Remove the worst of the mold and if any is left wipe off with vodka. I'm planning on buying a cheap bottle of vodka for the kitchen. Should be great for other uses like sanitizing a surface after raw chicken.

Today I'm starting oil asparagus pickles from my Preserving Italy cookbook. No canning - will keep in fridge up to three months if kept covered with olive oil.

Sara, if you buy a good bottle of vodka it can have a duo purpose, wiping off mold and an elixir for whatever ails you! lol

That is true Carole but in the kitchen I want to be able to wipe the floor with it if I want too and I just couldn't do that to good vodka. In the summer time I like a bloody Mary now and then but other than that I don't drink vodka. I do use it to make vanilla flavoring and other extracts.
