Alicia, while you are waiting on someday read up on fermenting and start collecting info on it. That's how I got started. Knew about it and read up on it for a year or so before I actually started doing it. I am still reading and learning.

If you have a copy of MJF Mag Aug-Sept 2015 there's a great article on making ACV. If you don't have that mag let me know and I will print off a copy and send it to you. Must warn you though fermenting may become additive.

What's something and good to do with small tomatoes. My son just gave me a BUNCH of them and I don't want them to go bad.

Alicia - I'm with you. I'd love to do ACV SOMEday.

Nice large kitchen, Carole. My kitchen is small. More counter space than when I bought the house, but never enough. LOL!

Linda if the tomatoes are really small like the snack size in stores than you can ferment them. They are tangy & fizzy. My favorite thing to ferment. Here's how.

Use no metal utensils. Stainless steel is okay.

After washing the tomatoes layer them in sterilized wide mouth mason jars. 2 Tsp Kosher or sea salt - no iodine. Add the salt as you layer the tomatoes. I like to add fresh herbs but dried can be used. Whatever herb you like with tomatoes. Fill jar to 1/2" from top with non-chorine water. I use spring water. As in canning run something down the sides of jar to release bubbles. Keep tomatoes covered with water at all times or they will mold. My last batch took 2 weeks to ferment. I leave it out on the counter so I won't forget to check on them. Cover with kitchen towel.

Back in the summer on the canning thread we talked about adding bread to top of pickles when fermenting. Eastern Europe way of doing it. I put bread on top of all my fermenting. Helps to keep veggie under water and may add to flavor. The bread has to be kept wet or it will sop up the water. Use hearty bread - I prefer rye - sandwich bread will turn to mush. Adding bread is optional. I have no recipe that calls for bread.

That's all I know to do with them. I have dried making sauce but found the skins are too much trouble. Not big enough to dry unless you want to ground them up for tomato powder which is good in soups and sauces.

Thank you, Sara. Sounds good - I will try that if they are the right size. The tomatoes are mostly slightly larger than cherry tomato size. Will that work?
So - I don't put lids on them? Just a cloth and add water every day? And how do I know they are completely fermented? What will they taste like? Do you just eat them as a snack?

Put a lid on it. Always wanted to say that to someone. Not sure about cherry tomatoes. I know who you can ask. Lisa 'nubidane'. She's the one who posted about fermenting tomatoes.

I snack on them and put on sandwiches. I also like them with cottage cheese.

I guess I'm confused. You put a lid on them even when they are on the counter fermenting? Or just the towel? As you can see, I know nothing about this. LOL!

After I put lid on it I cover it with a towel. After a couple of days recipes say to store in cool dark place to finish fermenting and that's my counter top under a towel. When done store in fridge.

It would be fun to have a root cellar to house my fermenting jars but then I would have to fight off the creepy crawlers. After thinking about spiders in a dank dark hole in the ground my counter top works for me.

Linda now that I have confused you I hope you will give it a try.

Oh! I hate creepy crawlers, too. LOL!

I will try it with some of them to start. Need to get some wide mouth jars (quart or pint?). And how do you know they are done? Just by taste

I have only used qt jars so I really don't know about the pint jars. Everything I read uses qt jars or crocks. If you try pints cut the salt to 1 Tsp. I do divide the qt jars into pints after fermenting for storing in fridge. Except for the tomatoes that don't last long in my house.

The only way I know to test is by taste and texture. I like mine less crunchy so I ferment into I like it. It makes a vinegar so you can also tell by the taste of the vinegar.

Linda we do need to get together so we can have a day of preserving food and/or crafting.

Yesterday I made a batch of my Tex-Mex seasoning. It will be a little different than what I have made before. The grocery store was out of chili powder on the Mexican food rack so I got menudo chili mix instead. It has a much stronger chili smell than regular chili powder and added ingredients. I couldn't smell cumin and I really like cumin so I added some plus garlic powder. The next cold spell I will try it out in a pot of chili.

Thanks Darlene now all I need is a northern to blow in - it's 85 today. Way too hot chili.

Went to the fruit & veg stand and bought persimmons so tomorrow I will start a batch of persimmon vinegar. Just sounds like fall to me.

Started the persimmon vinegar this morning but didn't quite have enough to fill a qt jar, so I added the core and peeling of a large pear I'm roasting with carrots and potato. Persimmons and pears should taste good together and won't overpower the other. Will let you know in about six weeks how it turns out.

I forgot to say I cut some of the persimmon seeds open and all were spoons so I guess I will be shoveling snow off the deck come winter. Snow I can handle - ice is another story.

Cabbage is on sale for 39 cents# and it's on my grocery list for sauerkraut. My first and only batch molded so it's time to try again. I'll use the little crock my sister gave me.

I just made a huge batch of green tomato relish. It uses red and green peppers, green tomatoes, onions, vinegar, sugar, mustard and celery seed. You cook it down until thick ank put in jars. It is a sweet relish that is delicious on hamburgers, hot dogs and in egg salad.
I use the small tomatoes for tomato soup.

You gals are really keeping busy! I have been in over my head. We recently moved but I was able to make a quick trip up to the mountains and get some apples. I have dehydrated four loads. I have done Pink Ladies and Galas. Lots of work but we love them. Carole your kitchen is beautiful! I love the open space. Maryellen

Today I am canning pickled beets and jalapeno pepper jelly in the Yellow Rose Cottage. It rained a little bit during the night and we may get a little more. Perfect day for canning.

The electric water bath is heating up so I have time for breakfast & hot tea before I get started.

The only thing cooking in my kitchen these days are basic meals. Nothing exciting. This Fall, I have sort of lost my interest in a lot of kitchen work. But I am thinking about doing some old fashioned family cookie favorites for Christmas this year. I am in the mood for good gingerbread cookies for starters.

Is your gingerbread cookie recipe a family recipe? I'd like to make some this year. Mom used to buy gingerbread santa cookies at the bakerry - a hard cookie with a picture of an old fashioned Santa on top of the white hard icing. Wish I could find those here.
