Have a safe and pleasant trip and let me know how the asparagus turns out.

I've got to get off this computer and make pancakes with my Mother - it's all new to me - so I'm excited to see how I like sour-dough pancakes.

Sara,
That is something I have not tried, sour-dough pancakes. How did they turn out? Where did you find a recipe for them?
Did you try the bread from MJ's book yet?

Denise the sour dough pancakes were delish and the recipe is in MJ's Wild Bread cookbook. I am working on week two of my mother. Sat morning is baking day so I will do a beginner batter bread. I will probably do a lot of batter breads so I don't have to knead. Kneading takes a whole day of my energy so I would have to be having a really good day to knead.

Between MJ's book and her Wild Bread chatroom I feel like I am having private lessons to learn how to make sour-dough "Wild Bread" breads. I highly recommend both. Both are well done and whether you are a beginner like me or been baking sour dough bread for years there is something for everyone.

One batch of chicken thigh broth in slow cooker over night is now cooling on kitchen counter. Second batch in and will be done at 5p.m. Thunderstorms tomorrow so probably won't get to can until Sat or Sun.

That broth sounds good Sara. We are supposed to have a couple more nice days and then storms for a few days.
I haven't purchased MJs bread book yet but I will have to look into it.

Denise it's a well done book.

Checked on tomatoes and asparagus this morning. Asparagus is ready so it is in fridge. I will let the tomatoes ferment for another week.

I like sauerkraut too. I make it now and then.

Today I pressured canned 2 28oz jars and 2 pints chicken broth. Gave my sister a quart before canning. Neighbor just left and I sent her home with one of the pints for her 86 year mother who has health issues.

We have an authentic German deli just across the border in Lacolle, Quebec called Charcuterie Stefan Frick. They make the best sausages and sauerkraut!

This afternoon, I made a batch of baked eggplant for eggplant Parmesan.

You can check out my method and recipe on my blog: http://www.carolesquiltingetc.com/2018/04/eggplant-parmesan.html

What I like about baking is that the eggplant freezes well. I tend to buy a large eggplant and bake it all. When I'm in the mood, I pop some slices out of the freezer, cook some pasta with some red sauce ... cheese ... don't forget the cheese and .... Yummy!

I'm stuffed and yet just the thought of Frick's sausage make me want some! lol

Carole I like baked eggplant too. The long slender ones are my favorite and hard to find around here.

Canning chow-chow today and tomorrow. I prepped it yesterday.

Pressure canning 4 pints mushroom broth.

Making Pesto Abruzzese from my Preserving Italy cookbook. It's a paste made with carrots, onions, celery, and EVOO. Kept in fridge up to 2 weeks to use like the holy trinity in Italian cooking. Not good raw but great when cooked.

I have ham soup in the crockpot for this rainy day. Not my daughter's recipe but my mom's this time.
I have never heard of Pesto Abruzzes Sara. What kinds of dishes do you use it in?

Denise your ham soup sounds yummy.

The book said it could be used instead of sautéing veggies to use in soups and sauces. I will use it on days I want to cook but don't feel like prepping veggies. Will definitely use it for spaghetti sauces. If I find I use it a lot I may make one with southwest flavors by adding cumin, jalapeno peppers and using cilantro instead of parsley. I like having a base recipe than changing it up to the way I cook.

I roasted 3 beets and will make pickle beets today but will not can. Between sisters and myself we can eat them in a couple of weeks. Will do fine in the fridge.

Still making batter bread with MF's sourdough mother. Mother may be ready for loaf bread soon. I sent my great niece MF's Wild Bread book and she is excited to make some of the recipes. Now that we each have a book we can e-mail each other and say I'm making such and such page and the other can look it up and know what we our baking. I think that will be fun.

Sorrel is big enough to harvest so sometime this weekend I hope to make a small pot of sorrel soup with beet greens.

Today I am drying sweet potatoes for my sister to make muffins. Next time they go on sale I think I will dry some for my pantry. Zucchini and carrots are good in muffins so sweet potatoes should be too.

Also air drying a sprig of my apple mint that broke off in yesterday's thunderstorm with high winds.

Never thought of sweet potatoes Sara. Do you slice them or grate them? Do they have to be rehydrated before adding them to baked goods?

I sliced them; put into food processor for fine dice; re-hydrate before adding to muffin mixture. Add the dried foods to warm liquid for a minimum of an hour before needed. I include the water/juice/broth from re-hydrating in required liquid. There's a lot of flavor in the liquid.
