Sweet potatoes I'm a muffin mixture sounds delicious! I love carrots and zucchini muffins. How is your Wild bread coming along, Sara? Have you been baking loaves of it yet?

Winnie, I haven't been feeling well so the mother was thrown out and I will begin again when I feel better. Before the extreme fatigue set in I was making batter bread so I didn't have to knead. I may invest in a stand mixture with kneading attachment so I can make loafs.

I have been making homemade lemonade every Tuesday for the past 3 weeks for Lily june! She loves it. She only drinks Milk and water. She has never tasted soda or tea yet. I coaxed her to taste the Lemonade and she said, " Ganny that is Yummy! " More! LOL!
I don't do the simple Syrup, I just squeeze the fresh lemons, add sugar and filtered water. Chill!

Yesterday my neighbor brought over more produce she got at the Food Pantry. She goes late on the day food is given out and they load her up with sacks of what they have that day. She tells them each time she will share it with a neighbor and they tell her that's okay.

Two full plastic grocery bags each of yellow onions and green bell peppers. One full bag of the little mixed color peppers. My kitchen table is covered. My two sisters will take what they want then I will use what I need and can what is left. Will pressure can the peppers and onions with a little salt in spring water to be used in cooking. No seasoning so I can use in whatever recipe I want. Will be handy for soups, stews, and sauces.

The small peppers have a hint of mild heat. The heavy fatigue has lifted but I always deal with afternoon fatigue. Nothing much gets done around here after 12 noon.

They should work just fine. I love the colors - red - orange - yellow. I roast them when I roast other veggies.

The small peppers showed signs of spoiling so I prepped what I could safe yesterday and have enough to pressure can 4 pints this morning. Will use them mainly for spaghetti sauces.

Have 1 qt jar of sauerkraut perking away.

Denise downsizing canning takes a little thought like cooking for two instead of four or six. Sometimes I still cook too much and I don't like leftovers like I used to.

Yesterday I made soup with one quart home canned mix veg with potatoes - leftover store can tomatoes - 1 pint corn cob broth - handful dried mustard greens - handful fresh sorrel - cup cooked dried hominy - seasoning and water. Very tasty - I do like leftover soup.

I had cooked the hominy to can but the day I was to do it was a bad fatigue day so I froze it in single servings. I prefer canned veg for soup rather than frozen.

I didn't know - I just did it. I buy dried hominy from the same place I get heirloom dried beans. Cooked it in slow cooker. Much better than store can hominy. The kernels are bigger too.

Got to stop playing on my laptop and check on my electric canner to see if water is hot. I keep my jars in it and use the water to fill pressure canning. Canning in my Yellow Rose Cottage takes a little planning and carrying things back and forth from house to cottage but it's worth it.

One of my jars didn't seal - always a mystery when that happens - y'all know how I love a good mystery but not this one. The un-seal jar is in the fridge and I will use it in the coming days for flat bread toppings.

Drying green bell peppers.

Back from grocery shopping with my sister and resting before I do whatever it is needing to be done.

In the produce marked-down bin I bought three pkg of sliced zucchini to use in making another batch of chow-chow.

Two pkg of button mushrooms to dry.

Two pkg of sliced & seasoned butternut squash - will roast with carrots and onions. What isn't eaten will go in soup.

Chicken thighs on sale so have four thighs for chicken broth to can and meat for Annie.

In diary marked-down bin I found a roll of pizza crust. Will cut it in half and make two pizzas. My other sister is coming over at 3:30 for snacks so we each can build our own pizza. Italian sausage was on sale so I'll cook it and it will be good on our pizzas. Grated cheese also on sale.

My daughter brought me home a huge bag of cucumbers and yellow squash from their family garden! I have 4 bags of the squash cleaned , sliced and frozen plus a bag to eat sometime this coming week. The cukes are cleaned and ready to slice to make my annual bread & butter recipe that my Mom always made. It is a family favorite. All of my jars and seasonings are ready to go. I am thinking about getting the cucumbers ready to process on Saturday morning. The recipe calls for the salted sliced cakes and onions to sit overnight so that the excess water drains out before the canning process starts.
