So true, Sara. Even as an adult I used to love to go visit mother. Usually my sister would come with her family too.
On Friday evenings, in the spring, mother would have supper almost ready when we all arrived. She made a "Mexican" dish...I'm not sure if was anything more than chili, cheese, fritos, and chopped onion...which is Frito pie! But hers had something else and it was baked in a casserole dish. Bubbly and hot, served with lettuce, homegrown tomatoes, chopped onion drizzled with an oil and vinegar dressing.

Of all the holiday meals, all of the every day meals she prepared for us or her company...that simple meal is the one I remember best! For some reason it hit the spot with me.

Marilyn, talking about Frito pie took me back from the time Dustin was in kindergarten to the last football game played at home when he was a senior. I worked my share of concession stands from little league baseball, football, and when pro-wrestling setup in the middle of the football field to help raise money for the library.

Frito pie was always a favorite and we always sold out. I remember how we did it. Split open a little bag of Fritos lengthwise and fill with hot chili - grated cheese - and jalapeno peppers optional. This coming winter I may have to buy a little bag of Fritos and chow down on one of my favorite ways to do Frito pie.

Went and picked up more peaches. They are ripening fast so I am getting them into the freezer today. At least the ones that are very ripe and we can eat up in a hurry. I am planning to do peach freezer jam also.

You could make peach ice crezm! Yum!
My husband bought five big peaches at walmart. I peeled, sliced and sugared them for supper last night. Every drop was eaten and enjoyed! Baylee likes hers
with just a bit of coconut. The rest of us enjoyed ours plain.
I do believe summer peaches are our favorite fruit.

Just getting caught up on here. Sara and Marilyn, I am going to try your pickle recipes. Our produce is just at its peak right now so we are really enjoying it. A local neighbor started her own greenhouse and has grown into having a little farm store where she sells her produce and local honey, plus homemade salsa, etc. and eggs. I'm so proud of her! She also now has a CSA program and we get a basket of fresh produce every Wednesday. It's so handy to just run over and get what we need from her store fridge. She has a cute little box with a slot in it for payments or IOU's...all on the honor system. It's so much better than what gets trucked into the grocery stores.
I would be interested in looking at any cookbooks that you are weeding out, also. Like I need another cookbook! haha but they are a weakness of mine!

Linda, it's a Ball wide mouth Mason Jar. I ordered glass fermenting weights that fit into the jar to keep what is being fermented under the brine. A flat plastic lid with hole in the middle for escaping air fits on top of jar and is secured with a canning ring.

The jars I use for fermenting are the green ones that help to keep light out. I also wrap the jar with a dish cloth so I can keep the jars on the counter. If I put them in a dark cabinet or closet like the books say I would forget them. Out of sight - out of mind.

Are you thinking about fermenting?

Linda, I bought my weights and silicone lids with the nipples that have slits in them from Amazon. I also ordered some screens to put on wide mouth jars so I can sprout seeds. Of course I love alfalfa sprouts...and I was told not to eat them because they are not for people with auto immune issues like RA! Bummer. I ordered a lot of other sprouting seeds from Patriot Supply. Now I need to sprout some. I also want to try growing micro greens. Curosity!

Four chicken thighs in crockpot for Annie. Will last her a week along with her dry dog food. I season them with fresh bay leaf, onion, garlic, dried thyme, S&P. She has the chicken and I have the broth. Bless her heart she doesn't know what plain chicken tastes like.

Busy Kitchens! My neighbor brought me Peach bread! It was so good! The peach orchard is just down the road and it is overflowing with peaches!!
My hubby uncle is sick and ask me for a 7-up cake. I had not made one in years, couldn't find my pan so I used my Great Aunt Matties big tube pan. The cake torn up in a 100 pieces when I tried to get it out! I seasoned it well. Too hot to cook!! but I tried! I told him I will try again when it gets cooler and I have my pan!! It still taste good!
