Marilyn, I have always loved poke cake. My mom used to make it a lot when we were kids. Loved when we knew company was company because we knew we were either having mandarin orange cake or poke cake!

Judith, I have two little yellow squash that should be ready to eat mid week. There are lots of tiny babies too God gave us almost three inches of blessing rain last night.
My husband thinks the only way to eat squash is to slice it thin, put corn meal on it and fry it.
I love to split them lengthwise, put them on a plate with cut side down and microwave for a couple of minutes. Then I turn them over add some butter, salt, pepper and cheese. A bit of chopped green onion makes it pretty. So easy!

Making a pot roast with butternut squash and green beans.

Spent some time drying strawberries, bananas and zucchini yesterday. Have more zucchini, bananas and some butternut to do this week.

Our lunch was enchiladas, beans, Mexican Salad, boiled new potatoes, corn on the cob and BlackBerry cobbler. It was our one big meal of the week. We always have our son, daughter in law and Had join us. Today Had is working a double shift, so she could not come. But to my surprise Bay came in with her mom and dad. Thankfully she could eat everything I had made except the cobbler.

You girls have been busy!
My sourdough pot is going crazy so I decided to use some up. King Arthur Flour has a sourdough pizza crust that I used. I ended up making a calzone with it instead of a pizza. It was pretty good..I think I would like it as a crust a little better but it tasted good and was a nice change.
I found a recipe from an old friend of my mom's in my brother's recipe box for sourdough pancakes that I made this morning. You let it sit overnight and then add an egg and some baking soda in the morning. So many bubbles!!! haha They were delicious! I have found a keeper with that recipe.
I wanted to try a sourdough bread this morning, also from KAF, but it looks like I might not have quite enough starter yet...enough to make the bread but not much left to put in the pot. I just fed it and we should be good to go tomorrow!

Sure!

Mix together:

1 1/4 cup flour
1 1/2 Tbsp. sugar
1/2 tsp. salt
1 1/4 cup milk
1/2 cup starter

Cover and let stand overnight.

Then add:

1 egg
1 tsp. baking soda, dissolved in a small amount of water
Bake as usual for regular pancakes.

Since it was almost a rainy day and I did hear some thunder we're going to have grilled cheese sandwiches and tomato soup. It's tradition and it might be the last rain we see until October or so.

Connie, let us know how that apple dish actually comes out. It looks so delicious!!

Saturday, I made my annual batch of Mom’S bread and butter pickles. My daughter’s family garden has exploded with veggies so there was a huge pile of cukes for me again! Yesterday, I mailed out jars to my brother, sister and younger daughter. It is a family summer tradition now that I have been continuing for years.

Winnie, you are so lucky to have cucumbers already, I love making pickles and was the family pickle-maker for years. My crocks are still stored in the garage just in case I get the opportunity again.

Today my granddaughter and I spent some time dicing and slicing peppers for the dehydrator. I also did some celery. Do any of you do any food preservation this way?
Next week I plan to do bananas, pears and blueberries. Pears and blueberries will be new to me for drying. I am doing the blueberries from frozen. Want to use them in granola.

I made 6 jars of wild plum jelly from the plums on my daughters farm that grow wild in the yard. It has a very different taste , but it a local favorite of the old timers around here. I learned about it from daughter’s hubby who grew up in this area and his granny makes it all the time. It makes a beautiful dark red jam.

We love wild plum jelly. I make a lot of it every year. In North Dakota we can't grow a lot of the fresh fruits we are able to enjoy now, I remember my grandmother would have us pick 5 gallon buckets full of plums from our farm tree rows and she would can the whole plum in a sugar syrup to serve in the winter months. She grew up in the depression and canned and preserved everything she could to feed her large family.
Our plum trees are just blooming now. Your jelly looks very nice Winnie. I always love the pretty color it turns into.

Winnie, I love your Wild Plum jelly!

Julie, plums in syrup sound so good.

We don't get plums here until they arrive in stores. I have never canned them.
Today I am drying bananas and strawberries to use in granola and trail mix. I enjoy making my own and the store bought is so expensive anyway. I so look forward to when the fresh stuff is ready here.
Also going to freeze some potatoes for fries and such.

Wild plum jam is so good. We have a wild cherry plum tree in the yard but it doesn't produce enough at one time to make jam; it just spreads its harvest out all summer. Our white mulberry tree is starting to drop fruit so I think we will get our annul visit from Robins soon.

I would love to do a batch of wild plum and white mulberry jam. The mulberries are sweet but not much flavor and the cherry plums have flavor but are very tart so I think a blend would be good. As soon as I can get some apricots I'll do a batch of apricot banana jam and make my kids happy.
