Interesting - I may try some of that, too. We use stevia in our iced tea. and I do bake with sugar. I'd love to be able to cut out sugar - not easy with my sweet tooth.

I have a terrible sweet tooth and it's been a struggle to eliminate the sweet stuff, but I think I'm winning the battle. I was so addicted to carbs. I allow myself popcorn and dark chocolate within reason. I haven't had my a1c blood test since February and it will be interesting to see how well (or bad) I've done when I'm able to get in and see the doctor again. Right now a hospital or clinic is the last place I want to go. The erythritol is pricey but a batch of cookies once a month doesn't break the budget.

So I gave the blueberries to my daughter as they only had previously frozen and they aren't washed ahead of time. I can't stand not washing my fruit. Plis, previously frozen this time of year means the are almost a year old already. From last year's crop. I did get all the cherries washed and stemmed and about half of them pitted before I had to quit. I froze some and will make some pies for the freezer. I will get fresh blueberries at the end of this month.

Winnie, I have the book from Mary Jane but haven't tried the cobbler. I do have peaches to use before the new crop comes on here this year. Will give this try. The black raspberries are getting ripe and our bushes are loaded this year. So hoping we get a good amount of those too.

I do love fresh fruit. Right now we are eating fruit as fast as I buy it. Lol. Our peach tree here was a dud this year - worms in every peach. We got a few plums but many the birds got to first. The pecans are starting so hopefully we will get some of them. We don't know how much the previous owner did to treat them so will have to do it ourselves.

Linda, what are you thinking of treating the pecans for?
The only thing I've ever done for a pecan tree was to scatter some lime on the ground, out beyond the drip line. That was about 25 years ago.
Do you have some kind of problem?
I guess we are ahead of you. Our pecans bloomed, probably 2 months ago.
For weeks Tillie would go out the back door and immediately roll around. Of course some of the blooms would fall off but I swept up blooms for weeks. I'm so happy that that is over this year.

Thank you for the erythritol idea! I may look into that. I have had a sweet tooth my whole life! In the past, if I gave up sweets for a month, I no longer craved them. As much as I love them, I'm just trying to make better food choices. Do you know how the calorie count using erythritol compares to using sugar?

Winnie, can you tell me on what page of the MCK book is the peach cobbler recipe? I haven't been able to find it. All I can find is peach crisp. I'm looking for cherry cobbler recipe and thought I could use the peach one and replace with cherries.

This is my cobbler recipe. Sweeten your fruit. Put your fresh, frozen or canned fruit in a larger bowl. Add sugar. Canned peaches from the store...(if my hubby shops they are pretty sweet.) But add some sugar, about 1/2 cup. But if I am using frozen or fresh fruit...it needs sugar. I start with a cup. After the sugar dissolves I check it to see if I need more. ( remember this...if you enjoy a thicker liquid in your finished cobbler use sugar...do not be shy.) Blackberries always require a lot of sugar. While that is going on ...I roll out my crust and cut it 9with a pizza wheel thingy. Then I spray my Pyrex dish and dot the bottom with butter. Only about 14th to 2 Tablespoons. Next is a layer of dough strips and pieces. No one sees this layer so put in the curves, and rag tag pieces etc.
Next layer is the fruit. Yum.
Top the fruit with more butter. BE Generous! Use the remainder of the stick.
Next comes the dough strips...(those nice ones you cut first.)
The last things I use are some cream brushed over the top crust and a liberal coating of sugar.
Then bake it. I usually bake mine at 375° for about an hour or perhaps longer. Be su+re to put a cookie sheet on the rack below your cobbler just in case your cobbler bubbles over.
And lastly serve to your family and enjoy.

My reasoning for butter and sugar...I only eat a small serving in a custard dish. And my family does not need or want low calorie foods.

Debbie -- Calorie count and net carbs are zero. This is from the back of the bag of Lakanto brand Monk Fruit Sweetener which is a combination of erythritol and monk fruit extract.

we aren't planning on treating the pecan trees. Since they are not ready yet, we don't know if we have a problem. Hopefully, not.

I Have been known to use the refrigerated pie crusts. It sure makes for a fast prep cobbler.
My daughter in law had tried for Years to cook candied sweet potatoes and cobblers with less sugar and butter than i use. Finally she has given up. I've always said that we do not eat those except on special
Days...so what if they are a bijillion calories. My husband grew up eating his grandmother's cooking. He had never been fat. So I cook for him...what he likes...

Your cobbler recipe just brought to mind my mom's blackberry dumplings. When my sister was sick and I went to stay with her at my dad's we got to talking about mom's dumplings. She was craving them, she couldn't eat much because the chemo made her sick but I got mom's recipe and the stuff and made them for her. They were so good and it gave us a sweet memory together. It brought mom back to us if even for a little bit.

Linda, the recipe is Peach Crisp and not Peach cobbler and it is found on page 181 of the MCK book. My apologies for getting the terms all switched around! The peach crisp was easy and I like the fact that MaryJane’s recipes are never overly sweet to the point that you can’t get the real fruit flavor.

I had some Bing cherries that needed to be used, so I pitted them all cooked them wth a little honey, puréed them and they are now on the dehydrator for fruit roll-ups. The grandkids love them (as does grandpa) and they keep well in the freezer stacked between wax paper. My garden is blessing us with all its goodness so dill pickles and green beans are next in line for preserving.

Sounds like your garden is keeping you busy Julie. I love cherries. I have been eating a few of the ones I froze. Keeps me cooled off on these hot days. I still haven't tried to do the fruit leathers yet. I need to do something with some pears before they start to turn bad.
