Marilyn I store them in wide mouth green canning jars in my pie safe with screen door. What I have read glass stores better than plastic. I try to use what I dry within six months though books say up to a year if stored correctly. To store longer I think a vacuum-seal would be needed.

Since I dry small batches at a time 1-2 qts I rarely have anything last to six months. When I dry eggplant I wrap serving sizes in Press & Seal before putting in jars. Eggplant easily takes on moisture if not air tight.

Today at the grocery store I bought a pkg of five assorted pork chops for $1.49 a lb. They are marinating in the fridge to cook and freeze tomorrow. Two chops have MJF Indian Blend dry rub; two have my Tex-Mex dry rub; and the largest one is marinating in a liquid sweet & sour mix of my making.

The Tex-Mex chops will be diced and mixed with Spanish rice for stuffed peppers.

The others will be cooked and frozen for future dishes.

Connie, I made the pork & rice peppers today. I ate two - enough for two more lunches, and froze 14. They were small peppers. I took a short cut and used Uncle Bens micro-wave rice. After opening the pkg a little I added olive oil and a tsp of my Tex-Mex mix before heating. I find Uncle Ben needs a little help now and then. lol

That's funny Sara. We Texans like our spice. I kept adding jalapeno slices chopped up( from a jar), to our corn casserole today...trying to get it just right. I guess it was ok, because my son and his wife cleaned out the last bites.

Marilyn, I like the convenience of sliced jalapeno peppers. The next time you are trying to get it just right add a little of the pepper vinegar to the corn casserole. I would start with a 1/2 tsp and add more if needed.

Jami and I were partners a few years back in the Show your State Swap. She sent me some Texas Chili Seasonings! WOAH!!!!! HOT!! I loved it, My hubby could not eat it!! He likes bland , bland food! He does not even use Black Pepper! I shared it with the cooks in my family and they LOVED It!!

I've been playing, cautiously of course, with my pressure cooker. So far so good!

I became interested again when I had to use dried beans in a soup recipe. Goodness, they take forever to cook even after soaking 12 hours! Pressure cooking would take a lot less time!

I bought a book The Great Big Pressure Cooker Book: 500 Easy Recipes for Every Machine, Both Stovetop and Electric by Bruce Weinstein and Mark Scarbrough for information. I was hoping they had a time table on dried legumes but they do not. The book is good and I'm enjoying reading it.

Sometimes we have nachos as a snack or even our evening meal. I drizzle mine with the juice from the jar and a very few pepper slices. My husband gets a pepper on each one.

Today I started brining brisket for corned beef. Brining and fermenting are so similar I decided to post it here. Both are ways to preserve food. Now days corned beef isn't so much about preserving as taste.

Sara, looking forward to hearing all about you corned beef!

Last night I made a batch of my home made granola. It has no refine sugars and is sweeten with organic maple sugar. I also made a batch of pasta. I took a class on Craftsy on pasta making and realized I was doing it all wrong. I couldn't understand why my pasta would not dry. Now I get it!!! Here is a picture of the fruit of my labor:



Tonight I will be tasting the fruit of my labour! Let us hope that it is as good as it looks!

Carole the corned beef should be ready this Sun. Brining for 10 days.

Your pasta is beautiful. One of these days I'll have to get around to making a batch.

Cooking 6 quarts of Crowder peas because I walked in my Kitchen today to puddles of Water! Going to share with my neighbors and my Uncle James loves them!! Fridge and freezer went out overnight and I lost everything in the Freezer and Fridge! Thank the Lord!! I prayed right there!!!! my hubby got to Lowes, got a new one, being delivered tomorrow!!! I am so Thankful!!! Lily June is coming tomorrow for over night a few days, her mama is going to Dallas to work!

My kitchen was busy with heart shaped tea cake cookies, my husband's grand mother's recipe, frosted with my good frosting...at least everyone who tastes them says they are soooo good. I also made chocolate cupcakes with white buttercream. Five year olds love cupcakes. I must say this time the cookies won, however. It is the butter and almond flavoring. They always want more.

Great Granny's Tea Cakes

2 Cups white sugar
1 Cup soft butter (room temp)
2 eggs
2/3 cup milk. (I use canned milk)
1 Tablespoon baking powder
1 teaspoon vanilla
4. Cups flour
1/2 teaspoon salt

Mix sugar and butter. Then add eggs, milk and vanilla.
I use my mixer on low. Then after the liquid is incorporated I turn the speed up to medium for a minute or so.
Next whisk the flour, baking powder and salt together in a different bowl. Then add to the mixer. Low speed until you don't see loose flour. Now scrape down the sides of the bowl, turn mixer up and run for up to one minute.
This dough is soft.
( I use a pillow case, folded in half to roll dough on. I keep it in a plastic slider/zip lock bag. It can be used several times before Shaking, washing and returning to its bag.)
Make a nice pile of flour and spread with your hands to cover the cloth. Be sure there is extra flour in the middle. Scoop out a blob of dough about the size of a grapefruit. Roll it in the flour, press gently, turn over, press, turn. Now you may roll it out. (I use a pizza dough roller that I bought from Pampered Chef many years ago. WHY? Because I lost my rolling pin!
Cut cookies with cutters of your choice. I use an egg Turner spatula, slipping it under the cookies and lifting them to the ungreased cookie sheet.
Bake in a preheated 375° oven for 10-12 minutes.
Check for color, best when lightly browned around the edges.
Remove from oven. Cool 4-5minutes then use a spatula to move to paper towels to cool.

Frosting
1 stick soft butter
4 cups powdered sugar
1 teaspoon almond extract
Mix this with a mixer, adding cream or milk in small amounts until you get the consistency to spread. If you get too much liquid...add more powdered sugar.
Spread on cookies. Enjoy.

The cupcake frosting had vanilla rather than almond flavoring.

For chocolate frosting, also Great Granny's concoction...use the same amount of butter, sugar, and vanilla...but add dry cocoa, about three rounded Tablespoons...and the liquid is left over coffee from breakfast.

I just used a cake mix this time.

When Lottie Moon went to China as a young missionary, she did not speak their language. Using a tea cup as her measure, she made tea cakes. She took her warm cookies out to the streets to the children at play. When she got to know them, she asked to see their mothers, and offered cookies to them as well. So she taught them about Jesus, using love and a simple tea cake recipe.

Great Granny was born in 1880. When she was ten, she helped her mother make meat pies (folded over and baked) and tea cakes to sell to the train passengers who came through Stephenville. Her daddy worked at the depot, and they lived across the way.
