Violet Jelly – yields approximately 5 half-pint jars
2 Cups Violet flowers
2 Cups boiling water
1/4 Cup lemon juice
4 Cups sugar
1 package liquid pectin (3 ounces)
Pick any stems from flowers and discard. Make an infusion by placing flowers and boiling water in a half gallon mason jar and capping tightly. Let sit for at least 4 hours or let cool and refrigerate for up to 2 days.
Strain flowers from infusion and place the 2 cups of infusion in a large saucepan along with lemon juice and sugar. Turn heat to medium-high and bring to a rolling boil, stirring constantly. If using a candy thermometer, heat to 220 degrees. (jelly stage)
Add the pectin and boil for 2 minutes.
Ladle into hot, sterilized jars and cap with sterilized 2 piece canning lids. Place jars in a water bath canner for 5 minutes |

Thanks Denise. Don't think I have enough violets to fill 2 cups. The violets are increasing every year so maybe by next year or I could sow seeds next spring. What I like about gardening and canning is there's always next season or year. |

I have a few less violets. Apparently Annie likes them too. While I was working in the yard earlier she helped herself to several blooms. |

Dogs are funny aren't they. Maybe you need to plant some Annie Violets. Last evening I discovered a cat napping in the barn/garage on Luckys bed. Later I caught that 'evil eye' that Lucky gave me...she could not figure out how to get to her favorite spot in the flower bed next to the house. I had tubs all along the border, and her spot is behind them. |

Mock Mincemeat from 1944 Victory Cookbook wartime edition.
6 green tomatoes 6 tart apples 1/4 lb seedless raisins 1/4 lb seeded raisins 1 Tbsp cinnamon 1/4 cup fruit juice 1/4 cup cider vinegar 1/2 cup minced citron 2 Tbsp orange rind 1 tsp salt 1 tsp cloves 1/2 tsp allspice 1/2 tsp ginger 1/4 tsp nutmeg
Force Tomatoes and cored apples through a food chopper. Add remaining ingredients and cook until thick. Fill into sterilized jars and seal. Makes about 1 qt.
My thoughts: Some of the info is sketchy. Doesn't say if spices are whole or ground. I would use ground.
Just said fruit juice. I would use orange or lemon juice.
Called for seedless and seeded raisins I would use whatever raisins I had on hand.
I would divide the quart into 4 half pint jars. Recipe doesn't give canning instructions. I would follow instructions for green tomato mincemeat in Ball Blue Book.
1/2 pints; pints; quarts: process at 10 lbs pressure in steam pressure canner for 25 minutes. |

That sounds good! Next trip to HEB I think I will buy green tomatoes. But I think ten, so I can fry some. What kind of Apple's do you think you will use Sara? |

I think I am going to try this, Sara....thanks so much for sharing! Does anyone have any good ideas for using mincemeat besides a pie? Not that I don't love pie!! |

Here are the recipes using flowers I received from a speaker we had at an Herb Club meeting. I haven't made them, but the speaker brought some of the dishes for us to try. NOTE: I am no onger in this club.
Dandelion Honey 4 Cups dandelion petals 4 Cups water 3 (1/4 inch thick) slices of lemon 1h vanilla bean, split in half 2 1/8 Cups granulated white sugar
Prep time: 30 minutes Cook time: 240 minutes
Preparation • Pick dandelion flowers during the daylight while in full bloom. Remove petals, then measure petals only. • Place petals in a heavy saucepan along with the water, lemon slices, and vanilla bean. • Bring to a boil, reduce heat, and simmer for 30 minutes. • Remove from heat and let steep for 6 hours. • Strain dandelion tea through cheesecloth and discard solids. • Place in a heavy saucepan and bring to a low boil. • Gradually add sugar, while stirring, until sugar is dissolved. • Lower heat and let simmer to desired syrupy thickness (may take up to 4 hours).
Lilac Sugar Layer dry lilac flower petals with sugar in a jar. Let stand in a dark cool place for a few days. Shake every now and then. Perfect for baking or in tea.
Hibiscus Tea 2 Cups of dried red or pink hardy hibiscus flowers 1/2 Cup Lemon Verbena • Either steep in 12 Cups of water or run through coffeemaker using a filter as if you were brewing a pot of coffee. • While still warm, add honey to taste. • Add 1cup of cranberry juice and then dilute with water to suit you. • This is pretty garnished with orange or lemon slices.
Mast o Khiar Yogurt Dip 2 peeled garlic cloves 1/2 t fine grain seasalt 2 C greek yogurt 3 T chopped fresh dill 1 dozen fresh mint leaves chopped 1medium cucumber seeded and finely diced good quality extra virgin olive oil 1/3 C toasted walnuts 2 teaspoons crushed dried rose petals Dried Cranberries
On a cutting board, sprinkle the garlic cloves with the salt. Mash and chop into a paste with a knife. Combine the garlic paste with the yogurt, dill and mint. Cover and refrigerate until ready to serve. When you are all set, stir in the cucumber, add salt to taste. Spoon into a favorite dish and serve drizzled with the olive oil; sprinkle with the walnuts, rose petals and some dried cranberries.
Rose Petal Sorbet Recipe
Total time: Prep: 25 minutes + freezing Ingredients: 2 cups red or pink rose petals 2-1/4 cups sugar, divided 4 cups water 6 medium oranges 6 to 14 drops red food coloring, optional
Directions: 1. With kitchen scissors, cut off the white portion at the stem end of each rose petal. With a mortar and pestle or in a food processor, mash or process into a paste, gradually adding 1/4 cup sugar. 2. In a large saucepan, bring water to a boil. Stir in remaining sugar until dissolved. Stir in the rose paste. Boil, without stirring, for 10 minutes. Remove from the heat; cool for at least 1hour. 3. Strain, reserving rose syrup. Discard rose pulp. Squeeze the juice from the oranges and strain; discard pulp and seeds. Add 2-2/3 cups orange juice and food coloring, if desired, to the rose syrup. 4. Transfer to a freezer container; cover and freeze for at least 8 hours or until firm. Yield: 10 servings. Editor's Note: Verify that flowers are edible and have not been treated with chemicals.
Corn Tortillas with Fresh Flower Petals 1 pound masa flour 4 t salt cold water edible flowers, petals only (try nasturtium, pansy, roses, johnny jump ups, Calendula, dianthus) • Mix together flour and salt in medium mixing bowl. • SLOWLY ADD WATER, as needed, and KNEAD GENTLY until a smooth dry masa is formed. • Remove small piece, roll into a ball (Y:z size of a golf ball). Continue to do so until all masa is used. • Next take a tortilla press and between 2 pieces of saran wrap place a masa ball and press halfway. • Now open, remove saran wrap from showing side of tortilla, lay edible flower petals on half pressed tortilla, recover with saran wrap, and fmish pressing. • Remove tortilla and place it between 2 layers of wax paper. • Continue process until all masa is used. • On a warm griddle, remove 1 piece of wax paper and place raw tortilla on griddle. • Cook on one side until golden brown - about 45 seconds - then turn over and cook 1more minute. • Continue with remaining tortillas. • Serve.

Linda, Thanks for posting all the recipes.
Note: Any dried herb or edible flower can be layered with sugar or salt. Mint sugar is a favorite of mine.

Those all sound interesting! That yogurt dips sounds really yummy! Mint sugar....that is a great idea! Especially for iced tea! |

I posted this recipe on MJF Farm Kitchen and thought it was so good I would post it here too.
From the Durning House Restaurant and B&B in Van Alstyne, TX - their cookbook "High on the Hog".
Million-Dollar Pie
1 (12oz) ctn. Cool Whip 1 pint strawberries 1 8oz can crushed pineapple 1 c coconut 1/2 c chopped pecans 1 (14oz) can sweetened condensed milk 1/4 c lemon juice 2 baked pie shells
Mix first 7 ingredients well. Pour into pie crusts. Refrigerate for at least 1 hour. Yield 2 pies. |

Sara, if I don't make the crust part of the pie, gluten free folks can enjoy it. So I believe I will make it in individual bowls...no one will be the wiser. |

Those sound like reall good recipes! The corn tortillas really is different Leigh the flower petals in them.
The million dollar pie sounds yummy!

That Million Dollar Pie sounds good. I like Marilyn's idea, too - no crust! We are TRYING to cut carbs and sugar when possible. |
