Here is the Coconut Cake recipe. I also put it in the What's happening in your kitchen? Thread.

Creme of Coconut Cake

1 white cake mix
1 can Eagle Brand Milk
1 Cup Coconut
1 6 oz pkg mini chocolate chips (Optional)
12 oz. cool whip
1 Cup Coconut

Prepare cake mix according to directions on the package and bake in 9"x13" pan. While cake is still warm, poke holes in cake and pour eagle brand milk over cake and sprinkle with coconut and mini chocolate chips. Place in refrigerator. Before serving, cover with cool whip and sprinkle with remaining coconut. Store in refrigerator.

NOTE: I did not use mini chocolate chips when we made it for my Bunco group.

Linda your coconut cake recipe is good. I omitted the mini chips. I love coconut cake. The Amish market sells it and theirs is good but so expensive.

I will find and post one of my mother's recipes, though I haven't been able to find the yellow beans (they look like green string beans) anyway for a long time. It is for a 3-bean salad. Great for a cool salad on a hot summer day.

Me, too. I buy the canned 3-bean salads regularly. And put in refrigerator to cool before serving. But I remember that my mother's was better. I hope so.

My mother's is a 4-bean salad, and as I mentioned before, I cannot find the yellow beans. Here is the recipe, and it is super easy. I'm sure you can substitute another sweeteneer for the sugar.

BEAN SALAD
1/2 C vinegar
1/2 C Oil
1 small onion
1/2 green pepper
3/4 C sugar
1 can French beans (I think now they are French cut)
1 can yellow beans
1 Can green beans
1 can kidney beans

Drain juice from all beans, mix together, chill, and serve.

Below are 3 summer salad recipes that I got way back when I sold Tupperware.

7 to 9 day salad

1 large head of cabbage (or bag of shredded cabbage)
1 red sweet onion
2 green peppers
3 or 4 carrots

Grate all the vegetables and put in Fix n Mix bowl. (NOTE: I have 2 of these.)

Dressing:
2 C sugar
1 C vinegar
1 C oil

Mix together and salt and peppper to taste. This will last 7 to 9 days in the refrigerator.



7-Up salad

2 3 oz packages lemon or orange jello
1 12 oz bottle of 7-Up (diet or regular)
1 large can crushed pineapple drained, but keep juice (recipe says #2 can)
1-1/2 C miniature marshmallows
2 large bananas, sliced

Dissolve jello with 2 Cups boiling water. (says to use Mix n Stor - not sure what piece of Tupperware that is. LOL!)
Add 7-Up, pineapple, mini marshmallows, and bananas.
Refrigerate until firm. (says to pour into Cold Cut Keeper, a piece I do have, I think. If I can find it.)

Topping:

1 Egg, beaten
1/3 C sugar
2 T cornstarch
1 C pineapple juice (add water if necessary)
1 small Carton Cool Whip

Combine egg, sugar, cornstarch, and pineapple juice in saucepan.
Cook until thick.
When cool, stir in 1 small carton Cool Whip and mix together.
Spread on Salad!



Frozen Salad

#2 can pineapple chunks
#2 can Fruit Cocktail
i8 oz cream cheese
1/2 pint whipping cream
2-1/2 C miniature marshmallows
1 C coconut
1/2 C maraschino cherries

Drain cans of pineapple and fruit cocktail.
Whip cream and blend fruit and other ingredients together.
Add softened cream cheese and mix together.
Put in whatever container you want to use to freeze.
Freeze and eat frozen!

I haven't made any of these in ages. In fact I never made the last 2. LOL! I LOVE the 7 to 9 Day Salad.

If anyone finds the yellow beans, please let me know. LOL! I was wondering about substituting the flat bean oieces instead of the yellow. I'm sure that would work, too.

I remember eating a lot of bean salad. Trader Joe used to sell cans of marinated 3 beans but hasn't had it in a couple of years. It seems like as soon as I like something they have they discontinue it. You don't see the yellow beans as much as you used to but I did see seeds at the nursery; maybe you can grow your own.

I worked with a lady at the extension office that would eat a baked potato every day for lunch, topped with 3 bean salad. She must have really loved her beans!

Here are 3 of my favorites:

BLT Chicken Salad (this is a whole meal in itself)

1/2 cup mayonnaise
3-4 tbsp. bbq sauce
2 tbsp. finely chopped onion
1 tbsp. lemon juice
1/4 tsp. pepper
Combine all in a small bowl and mix well. Refrigerate until serving.

Place 8 cups of torn salad greens in a large bowl. Add:
2 large tomatoes, chopped
1 1/2 lb. boneless, skinless chicken breasts, cooked and cubed
10 bacon strips, cooked and crumbled
2 hard boiled eggs, sliced
sliced avocado
Drizzle with dressing. Serves 6-8


Southwestern Bean Salad

1 15oz. can kidney beans, rinsed and drained
1 15oz. can black beans, rinsed and drained
1 15.5oz. can garbanzo beans, rinsed and drained
2 celery ribs, sliced
1 medium red onion, diced
1 medium tomato, diced
1 cup frozen corn, thawed

Combine all of the above in a large bowl. Combine dressing ingredients; pour over bean mixture and toss to coat. Cover and chill at least 2 hours.
Dressing:

3/4 cup thick and chunky salsa
1/4 cup vegetable oil
1/4 cup lime juice
1 1/2 tsp. chili powder
1 tsp. salt, optional
1/2 tsp. ground cumin




Spinach Salad

Dressing:

1/2 cup packed brown sugar
1/2 cup salad oil
1/3 cup ketchup
1 tbsp. Worcestershire sauce
Combine all dressing ingredients in a bottle or jar; shake well to mix. Set aside.

Salad:

2 quarts fresh spinach leaves, torn
1 16 oz. can bean sprouts, drained OR 2 cups fresh bean sprouts
1 8 oz. can sliced water chestnuts, drained
4 hard boiled eggs, peeled and diced
6 bacon strips, cooked and crumbled
1 small onion, thinly sliced

Toss all salad ingredients together in a large bowl. Just before serving, pour dressing over and toss. Serves about 8

If people are interested I found several more summer recipes in my mother's huge recipe box, which I have. It holds about 6 times the cards in a normal recipe box. She has recipes for almost anything. If you are looking for a recipe, let me know and I will look for it. LOL!

This is a family favorite. I've been making it for 50 years.

MEXICAN SALAD

1 head of iceberg lettuce
1 large purple onion chop these and add to a large bowl
2 firm tomatoes

Open one can of Ranch Style beans...if you can not find them in your store look for chili beans.
Dump the beans into a collinder or a strainer and rinse well. Shake to remove moisture, then add to the bowl.
****** ****** ****** ****** *** *** *** *** *** ****** ****** ****** ******
If you are not going to serve immediately, cover the bowl and refrigerate. NOTICE! Do Not mix the ingredients..yet!

When you are ready to serve your salad add: 1 1/2 cup of grated cheddar cheese,
Then add the Kraft classic Catalina dressing...if you buy the small sized bottle, it should dress two salads.
Toss the salad. Add a bit more dressing if needed.
Top it off with crushed Fritos.
Since I pack two lunches almost every day, I usually have Fritos in the small lunch box size. Two or three bags are just right. And you can use regular or the chili flavored fritos!
This salad is so good. Serve it with a lot of perfectly cooked pinto beans, and either an enchilada type dish or King Ranch Casserole! Yum!

Ok a seven layer dip or salad is also good.

Put a layer of bean dip in a dish 9" x 1 3"
Mix taco seasoning with sour cream and spread over the bean dip.
Guacamole layer...mash four to six avocados. Add juice of one lemon and stir. Add salt to taste. Mix and if more salt or lemon juice is needed...Add tiny bits until you love it...then drop dollops over the sour cream, and spread to cover the layers below
Shred some iceberg lettuce. Sprinkle that over the avocado. Now add a layer of chopped tomatoes I like to use Romas( less juice )
Next I add some finely chopped purple onion, a layer of grated cheddar or Mexi blend cheese, and then I top it off with thinly sliced fresh jalopenos, sliced ripe olives and a few sprigs of cilantro.
You can dip it with tortilla chips or eat as a salad with a fork. It is yum.!!! Great surprise in my guys lunch boxes now and then.
