Pickled eggs don't last long around here. Never heard of dried eggs Judith.
Been thinking about doing some jar mixes to store. I've been seeing more about it lately. Need to learn more about it.

Judith - when you mention dried eggs, are you referring to scrambling them and then drying them in the dehydrator?

Denise - What kind of jar mixes are you referring to?

Dehydrator is getting filled again today... herbs, green beans, diced peppers, and pepper strips. I'm not sure what else I will put in there yet. WE are also making some strawberry ice cream for dessert for my hubby's birthday. Dinner will be flank steak tacos, refried beans, and pico de gallo. I am debating roasting some asparagus to go with it as well.

For drying the eggs I'm going to try mixing them up good and spreading them on plastic sheets in the dehydrator. When they are dry you powder them in the blender. From what I have read from people who have done it it should work.

How do you use the powdered eggs? Sounds interesting. I just have the round countertop dehydrators (2 of them). Can those be used for the eggs? I prefer drying fruit.

You just add the proper amount of powder (about a tablespoon per egg I think I recall) to your dry ingredients and add I tablespoon of water per egg to your liquid ingredients when you prepare your mix. I'm thinking it will be very handy to make up mixes for camping. I already have a big can of butter powder and buttermilk powder so with the powdered egg I can make up mixes that all you will have to do is add water. I won't have to bring eggs that might break or butter that will melt. Everything will be in the mix. Cornbread, cake, pancakes, etc.

Shannon~ Jar mixes like veggies dried and beans or rice, spices etc. Something where you just add water.

Judith~ I don't believe I have ever heard of powdered butter. Where do you get that? Very interesting. Now my mind is working on just what I can store in jars!

My son and daughter of my heart do their monthly shopping at Winco and now and then ask me if I want to go along. I found it on a pallet of other dried foods in the produce section.

I definitely want to give the powdered eggs a try! I have looked at water glassing them, but am thinking powdered would store even better!

Okay - something else I have never heard of. Water glassing? What is that?

Do you all have large dehydrators? Or will my round ones work as well? They are about 14" round.

Ed's older sister dehydrates and/or cans most everything and has for quite a while.

Water glassing eggs is where you put fresh, unwashed eggs in a pickling lime water solution. They are suppose to stay good for up to 18 months like that!!!

I do have a large dehydrator, but the round ones work as well! You can get a special silicone tray for the round ones to dehydrate liquids, or you can use parchment paper. We used a round one for years!!!

You can use the eggs one at a time.
I have a round Nesco. I can add lots of trays. I have 9 or 12 I can't remember which. I haven't used all of them at once in quite a while now.
They have a peach truck that comes here a few times a summer from Georgia.My daughter and I are getting a box the middle of July and splitting it then again the beginning of August. The boxes are too much for us to use up so that is why we are splitting them but will each end up with a box.

Since I have 2 of them (I think they are Nesco) I can put all trays on one to save counter space. Once I got for $10 at a thrift shop and the other I got for free from a post on one of the FreeStuff email groups. I need to put them to use.

Gosh, I have never tried preserving eggs or used a dehydrator. I have so little counter and storage space I never really look into these other kitchen accessories. Judith, how does butter powder work? Do you rehydrate it and then keep that in the fridge? Or just use it dried all the time?

This weekend, the kids and I did some more canning and dehydrating. We got zucchini bread jam, Asian, plum sauce, caramelized pineapple habanero salsa, and spicy jalapeno apply jelly canned. We dehydrated carrots, celery, green onions, peppers, chilies, and cherry tomatoes. We also blanched and froze corn on the cob and spinach. We started culturing some soft cheese last night as well, which I will use today to make lasagna for dinner. Busy days!

Yes, mine are both NESCO and have the motor in the top. They are also pretty quiet. I guess I need to get them out and do some dehydrating.

That's different isn't it. Guess I've never thought about flavored salt.
I've always liked 7 layer sald and found a recipe to share.

I froze all my strawberries this year. We still have jam so I won't use the freezer ones unless we run out.
Blueberries are ripening here so we will pick this weekend if we can.
