I just rinse it off after I scoop it out. There really is very little shell that ends up on it.

Linda, be sure to add a good chunk of butter. That keeps the potatoes from boiling over...I have no idea if it helps the eggs peel or not. Sometimes Julie will ask for my oldest eggs...one week old eggs will not peel...but she sets them in the back of her fridge for a couple of weeks more and they peel better. I take my eggs to the daycare each week, so they are not in my fridge long.

Today I made a big pot of Lidia's meat sauce. It was so good I forgot all about eating less to lose weight and had three servings with French bread. Didn't even have to have pasta. Froze six pints before I ate the whole thing. I did tinker with her recipe. I had a jalapeno pepper which needed to be cooked so I used that instead of the red pepper flakes in the recipe.

That sounds good Sara. Like the jalopeno.
Do you ever cook with Pablano peppers? I love them. More spice than bell peppers but less than jalopenos.

I have stuffed them with ground beef and Spanish rice and cooked in a Tex-Mex tomato sauce. I've seen recipes for using them in egg dishes. One of these days I may get around to trying one.

Sara, I just cut them up, dice or thin strips and add as if they are bell peppers. When I do onions and peppers for Mexican food, I add some in. My son loves steamed cabbage. Onions and very thinly cut pepper strips, including some pablano are thrown into the hot bacon grease, after the bacon dice is removed. Stir it or toss, put the lid on for a couple of minutes, then add and toss the thinly shredded cabbage. Cover.Reduce heat to simmer. After a couple of minutes I add salt and pepper and toss again. It works down pretty quickly. When I serve it the bacon bits go on top. Wade thinks it is pretty good food.

Marilyn, I have part of a red cabbage left from the pork chop dish and bacon in the freezer. Will give your recipe a try. Don't have palanos but do have jalapenos.

Linda, I'll copy it for you and get it in the mail today. If anyone else wants a copy I will mail it to you. It's too long for me to type out and post here.

Sara I would love that recipe, if it isn't to much trouble. I am putting a pork loin in the smoker this afternoon. Low and slow usually gives us an excellent roast. I think I will use hickory chips for the smoke flavor.

Shannon your curry and beef sounds so good. I like curry but I seldom make it - maybe I'll put it on this week's menu.

Today I'm roasting, carrots, bok choy, blue potatoes, leek, onion, and garlic with olive oil and dill weed. Now my crisper is empty and ready for a new month of veggies.

The bok choy not roasted will be used in beef broth soup with any roasted vegetables leftover.

Sounds lovely Sara!!! I save all my scraps - including carrot peels and ends, onion ends, celery ends, herb stalks, etc and put them in freezer bags in my freezer. I also add any veggies that are close to going bad. Then, when I make broth - be it a meat broth or just a veggie broth, I add the frozen veggies. Seriously yummy!!!

Shannon I used to freeze bits and pieces now I dry them to free up room in my fridge's freezer. Like you I use it to make veg or meat broth. The dried veggies can also be ground into a powder in a blender to add to sauces to add flavor and nutrients.
