Wow, you all are so efficient .... I haven't been in my kitchen since June 7!!!!

Sara - With all those beans I can just image that you'll be tooten' for a while! lol I'm also a big legume eater and my body, like probably yours too, has adapted accordingly. Thanks for the link to the bean world! What is the name of your bean book? Inquiring minds want to know!

Also, curious as to why you can beans?

Carole, I will chime in with my two cents worth. Canned beans save time. Soaking and cooking can take 15 hours, so if you cook a bunch and can or freeze them...you can eat in 30 minutes.
The best canned beans I ever ate were pintos, collected from end of the season dying vines, very easy to shell. Water, salt and the beans in pint jars, canned. Yum!
My husbands family purposely planted several long rows just so they could put them up this way.

The Bean Cookbook by Judith Choate

Since I cook for one cooking a pot of beans is a problem for me. I have tried cooking small pots but the broth is not as good as a big pot of beans. I have tried freezing them in single servings but they took up too much room in my refrigerator freezer. Canning allows me to have a variety of beans on hand. One pint will give me two to three servings depending on how I use them. Cooking for one means planning ahead and having a way to preserve what you cook.

There's a lot of food you just can't cook a little of - soups; stews; beans; curries; chili. Yesterday I made pork chop curry and this morning I canned 3 pints. Day before yesterday I canned 3 pints seasoned ground angus chuck that I cooked the day before. I am going to have to get better at judging how much meat I need to can four pints.

Canning or freezing allows me to have on hand easy food to cook when I am dealing with MS. For me to take care of myself and Annie I have to be able to feed us without having to cook everything from scratch. I enjoy canning so on my good days I can and on less good days I eat rather good.

Marilyn, we were posting at the same time. I have eaten my sister's from the garden to canning pinto beans and they were so good.

Another thought on how I can. I'm not canning for the winter months because I mostly can what I buy in the stores. I can so I don't have to eat on something for days or freeze it. I will use what I can in days; weeks; or a few months of putting it up. I don't expect my can goods to last more than a month or two so I will be canning year round. I will take advantage of sales to can and over time I will learn which can goods work for me and are worth the effort of canning.

Left overs are great, but after the second time...I usually freeze mine...but since out of sight, out of mind takes over and I forget them...oh my. Then comes clean out day which the hens love. So I am trying to learn to cook smaller, the way I did as a newly wed 55years ago. And even though we love a certain huge pound cake, I don't go there, except in winter...there is a perfectly good Sara Lee pound cake in the freezer at the store. My husband can eat the smaller one in a week and I am not making my hens happy.

Heard from the Chili Contest today and I did not win. But I did learn a lot about creating a recipe and I will do it again if they have another contest.

I didn't can, dry, or ferment anything today - gotta do something about that - will soak a lb of beans overnight and can them in the morning. Now to decide which bean.

We are beginning to harvest our red raspberries. A bumper crop this year. We have 70 feet of them we just freeze them one layer at a time on a cookie sheet and then bag them. No sugar needed until you use them in the recipe. Yum!

Bought a bunch of small beets at the Farmer's Market this morning. Probably won't be anymore for this year. Not enough to fire up the electric water bath canner so I will pickle them and put in the fridge. Have roasted, peeled, halved them, and measured out all ingredients. Will put them up in the morning.

Darlene if you would like to have the recipe I'll copy and send it to you. The recipe is for both canning them and putting them in the Fridge. The recipe is from PBS American Test Kitchen DIY Cookbook.

Thanks to my visit of the Motherearth News Fair and to a certain vendor, I have become absolutly obsessed in love with ginger scones.

I did tried a recipe from the From Scratch book "Lemon Ginger Scone" and I wasn't impressed. Well, it used way more butter than necessary. Yea, I never thought I would ever say that!!!

So I tweaked my Cardamon and Date scone recipe replacing the dates with ginger. So far it's good but I think I can tweak it a bit more. Not sure if I'm just not putting enough crystallized Ginger (gosh that stuff is good. I have a difficult time sharing with the recipe) or it's missing something else. The recipe does not call for salt. I may need to research that a bit.

Carole, even a pinch of salt improves the flavor of almost everything. I cook with kosher salt, larger grains...easy to get a pinch.
Crystallized ginger is good, a bit hot, but when your body needs it yum!

I hope you get your recipe perfected. It sounds good. I love gingersnaps. I made some at Christmas and added finely chopped crystallized ginger. It was ok but not snappy.

Today my DH and I did 22 pts. of garlic dill pickles. I also did 9 half pints of peach, apricot and pineapple jam. It's just the fruit no sugar. With the extra peaches I made a peach crisp. Sure was a busy day, but so good to have it done and everything is sealed. LOVE that popping sound!

Carole those date and ginger scones sound really good! Had chocolate covered ginger cookies once and I didn't care for them. Maybe because they weren't homemade lol...I do like chocolate on and in lots of foods.

Due to having an excess of milk right now (even with feeding three babies, we are getting 1.5 gallons a day!), I made some farmers cheese today. I flavored it with salt, basil, oregano, garlic powder and onion powder. Yummy!!!
