A while back I posted how to make pan bread from my great grandma's recipe. Well I have been adapting it for today.

Mix together by hand like you would do for biscuits.
3 cups flour, (I use organic flour)
5 teaspoons baking powder
1 3/4 cups water (milk could be used)
1 teaspoon salt (I don't use any)



Place an 8 inch pan on burner, heat between low and medium. Add 2 tablespoons oil of your choice (olive, canola, bacon fat etc.)

Pour in batter and spread to edges. Cover and cook 5 to 8 minutes. You can tell if it starts to burn.

Using a spatula a large one if you have one by tipping the pan up almost on its side as you slide the spatula under the bread and flip it up into the pan as you lower the pan back down on the burner, then cook the other side. Cover again. Since I needed two hands to flip the bread, so I couldn't take a picture.


You can see I left it a little to long and burned the first side a little. If you begin to smell it starting to burn, turn it quickly. Cook second side around 5 minutes or until a toothpick comes out clean

Hope some of you will be able to give this a try.

Brenda, I love this cool recipe you shared and I bet it is delicious with some butter and jam! It is also neat that it makes in a cast iron pot on the stove top too. Can't you just imagine your Grandma making this bread on her big wood cook stove?

Funny you mentioned wood cook stove Winnie. Yesterday I ordered The Settlement Cookbook 1903. One of the things in the book is how to start a fire in cook stove. I heard about the book on PBS's American Test Kitchen. They made a cookie recipe out of it. The cookbook was to help immigrates especially from Germany to settle in our country - hence the name. I found it on Amazon. Also ordered one for my sister Betty because she loves reading about the old ways in the kitchen. The book also has a little on canning.

This morning I canned pork roast in the rain. Woke up at 6a.m. to it really coming down so I waited for it to slack up and went to the cottage. Four pints are now in the pressure canner. If it wasn't for the going back & forth to the house I would can in the rain more often. It was neat to hear the rain on the metal roof.

I'm going to have try that recipe using einkorn flour. I'm not sure how the liquid content will need to be adjusted though.

Yesterday I got my 40 pounds of cucumbers canned. Sadly some had molded, with it taking me so long to get to them! But I still ended up with 23 quarts of bread and butter pickles and nine quarts of dill spears! Today I need to can strawberry jam... we picked up 12 pounds, as they were on sale.

Shannon your pickles sound yummy. Bread & Butter are my favorite.

Don't feel too bad about the moldy cucumbers that happens to me quite often. I buy something on a good day and before I get around to canning MS fatigue drops on me. I have learned to write it off as living with a chronic condition. The other choice is to do nothing for fear I won't be able to finish it. I choose to take the chance that all will be well with me and most of the time it is.

When I lived in Nevada for a while, my husband (former) and I bought a blue enameled wood cook stove and when we moved, we put it in our house and used it to heat the family room. A friend had one in Nevada, also, and we completely cooked a Thanksgiving dinner on/in it. Loved doing that. My ex still has that stove and I'd love to get it and bring it here to Texas. It had 6 burners, oven, warming ovens across the top of the burners, and a 20-gallon water reservoir. Loved the look of that stove.

Linda the stove sounds wonderful. I always wanted a cream and green one to match my vintage ice box. Wouldn't it be a hoot to can on it.

I tried something different for pot luck at church today, It was pretty and tasted good. I cut up some cucumbers and poured some strawberry vinegrette over it and then I cut up some strawberries in another bowl and poured the vinegrette over them. At church I put them in a bowl and staggered them in it and it was pretty and not bad tasting , something different and refreshing. You could add sesame seeds to it too. Just something new.

No fat of any kind is used in the pan bread recipe. Only the fat added to the pan. It can have sugar added if you want a sweeter tasting bread. I have made it using whole wheat flour also. Not all whole wheat though or it is real heavy. Spelt flour mixed with all purpose works well too. The liquid is easy to adjust if needed. It doesnt keep long though so I would recommend keeping left overs in the refrigerator.

Shannon that strawberry jam would be wonderful on this bread. Yummy!

As for the wood stove, I'm very fortunate to have a wood cook stove. I love cooking on it in cooler weather lol.... not that in love with the heat in the warm weather. I have even managed to bake in the oven. My brother collects wood stoves and changes them out. He had this stove and decided to swap it out for a smaller stove. He said this one was way to big for the space he had. We bought it from him and I love it.

Oh Sara, my stove is green and cream. Never saw that color before. I really like it.

Thank you Brenda for the clarification of your recipe. Your wood cook stove sounds amazing.
Shannon, did you grow your berries? My son told us of a new strawberry farm about eight miles away, where they are planted up high and you walk beneath them to pick them. Of course I was in the middle of dental work and did not feel like going this year. But next year I will certainly check it out.

Not much going on in my kitchen right now. I am spending ore time finishing sewing projects, traveling, and getting ready for my surgery tomorrow. I DO want to start using my electronic pressure cooker for some roasts and such. I love my crock pots in the fall and winter, especially. One of the 3 I have I plan to put in the motor home.

Shannon, you've been busy in your kitchen.

I just ordered myself a Double Dutch 5 qt pan



It will also serve as a cloche for my artisan bread. I also treated myself to a bread proofer from King Arthur Flour (I love that site) that has lots of potential. It will keep the temperature constant ... That's technology working for me and NOT the other way around! A definite bonus in a winter kitchen.



Gosh, I can even make large batches of yogurt in it!

As you can see, I'm slowly getting ready to tackle once again the art of bread making. I started baking bread in my late teens and stopped when I bought a bread machine. I'm really itching to get back into it especially with all the wonderful whole grain bread recipes out there.

Carole, nice Dutch oven and super nice the lid does double duty.

Will have to check out the King Arthur Flour site. We don't have that brand in my part of Texas but I see it advertised on America Test Kitchen on PBS.

Thanks Carole, I love all my cast iron. I was able to pans years ago when the prices were a lot better. I got a 12 quart Dutch oven at A Quality Farm and Fleet store for $12. It has approximately 3 inch legs on the bottom. It would be a small fortune now.

Anyone have a favorite kind of cookware other than cast iron?

I love cast iron! I bought a set of Princess stainless steel many years ago. It is heavy bottomed, good stuff. Then I have one piece of leCruset, that my son gave me for Christmas. I love it's thin walls, which means it is not as heavy as regular cast iron. They say cast iron has health benefits.

Favorite cookware... hmmmmm.... I obviously love my cast-iron, (by the way Carole - gorgeous piece!), but my other two favorites are stainless steeling stoneware. About thirteen plus years ago, hubby bought a stainless steel set. We got rid of all aluminum and teflon at that point. I suspect I was first introduced to stoneware by Pampered Chef by my mother-inn-law, but that stuff is greats well! I actually just got a new slow cooker that is stoneware that I will use for the first time today. I bought t because you can use it on the stove-top as well as in the oven, in addition to the lack of enamel, which there is debate of whether that leaches leading your food.

I am chronically iron deficient, so coking in my cast-iron is a great way to get a little extra iron ;)

Rotisserie chicken on sale today so I made taco soup to can in the morning. I don't have a recipe for canning taco soup so I will follow the pressure and time for putting up chicken and the one for veg soup. Whichever has the longest time I will use.
