Plum Cobbler

cups Italian prune plums, pitted and quartered

½

 

cup sugar

¼

 

cup flour

½

 

t ground cinnamon

¼

 

t ground nutmeg

 

t salt

Topping:

1

 

cup flour

3

 

T stone-ground cornmeal

 

cup sugar

 

t baking powder

¼

 

t baking soda

¼

 

t salt

½

 

cup buttermilk

T butter, melted

  1. Preheat oven to 375ºF.
  2. Toss plums with the next five ingredients; place in a Dutch oven.
  3. Bake for 40 minutes or until mixture is bubbling. Remove from oven; increase oven heat to 425ºF.
  4. In a medium bowl, combine dry topping ingredients.
  5. In a small bowl, whisk together buttermilk and butter.
  6. Add liquid ingredients to flour mixture; mix well.
  7. Drop topping by spoonfuls on top of plum mixture.
  8. Return to oven and bake 15-20 minutes, or until topping is light golden brown.
