peas and wild rice pilaf

Peas & Wild Rice PilafIris flourish

Cook Time: 50 minutes
Makes: 6-8 servings

Ingredients

½

 

cup short grain brown rice

½

 

cup wild rice

 

cups water

3

 

T olive oil, divided

¾

 

t salt, divided

¾

 

cup shelled fresh peas

¾

 

cup sugarsnap peas, diagonally sliced

1

 

T finely chopped shallot

1

 

scallion, sliced

½

 

cup chopped walnuts

½

 

cup orange-juice-sweetened dried cranberries

 

T balsamic vinegar

1

 

t fresh-squeezed lemon juice

Directions

  1. In a large saucepan, combine brown and wild rice, water, 1 T oil, and ½ t salt. Bring to a boil. Reduce heat to simmer, cover, and cook for 50 minutes.
  2. In a large bowl, combine cooked rice with remaining ingredients. Stir gently to mix.
