Tuscan Grilled Bread & White Bean SaladIris flourish

Cook Time: 9 minutes
Makes: 2 large servings

Ingredients

1

 

bell pepper, seeded and quartered

1

 

large onion, sliced into ½" rings

¾" slices multi-grain or Italian bread

T vinaigrette, bottled or homemade

1

 

15 oz can cannellini beans, drained and rinsed

1

 

large tomato, chopped

½

 

cup chopped fresh basil

salt

pepper

Directions

  1. Prepare grill to medium-high heat.
  2. Brush vegetables and bread with 3 tablespoons of the vinaigrette.
  3. Grill pepper and onion for 6 minutes, turning occasionally. Place bread slices on grill. Cook until pepper and onion are slightly charred and bread is toasted, about 3 minutes longer.
  4. Transfer to cutting board and cut into bite-sized pieces.
  5. Place beans, tomato, basil, and remaining vinaigrette in a large bowl. Toss to coat. Mix in the grilled bread and vegetables. Season to taste with salt and pepper.
