Nettle SoupIris flourish

Prep Time: 20 minutes
Cook Time: 30 minutes
Makes: 4-5 servings

Ingredients

1

 

onion, diced

4

 

cloves garlic, peeled and minced

1

 

T coconut oil or olive oil

3

 

potatoes, cubed

5

 

carrots, sliced

2

 

qts water or chicken broth

colander full of nettle tops

salt and pepper to taste

sour cream

Directions

  1. In a 4-qt saucepan, sauté onion and garlic in oil until soft. Add potatoes, carrots, and water or broth.
  2. Simmer, covered, over medium heat until vegetables are tender. Add nettles, cover, and cook until wilted.
  3. Remove from heat and purée, half at a time, in a blender or food processor. Season to taste. Serve with sour cream.
