Banana Cardamom Bread loaves in the pan

Banana Cardamom BreadIris flourish

Makes: 3 individual loaves

Ingredients

T butter, softened

 

T sugar

 

T light brown sugar

1

 

small egg

¼

 

cup overripe banana, mashed

t vanilla

½

 

cup unbleached all-purpose flour

¼

 

t baking soda

t salt

¼

 

t cinnamon

¼

 

t ground cardamom

dash of allspice

1

 

T chopped walnuts

1

 

T sour cream

Directions

  1. Preheat oven to 350°F. Lightly butter a Lodge-brand “Divided Rectangle Mini-server Pan” (www.lodgemfg.com), then dust with flour.
  2. In a medium bowl, beat the butter and sugars together with a wooden spoon until smooth and creamy. Beat in the egg, then the banana and vanilla.
  3. In a separate bowl, combine the flour, baking soda, salt, cinnamon, cardamom, and allspice. Add to the banana mixture and stir until well combined. Fold in the nuts and sour cream—don’t overmix.
  4. Pour batter into the prepared pan. Bake 25 minutes, or until a toothpick inserted in the center comes out clean.
  5. Remove from oven and allow to cool in the pan. Remove from pan and serve with butter or cream cheese.
