Anybody know why my fruit is floating the top of my jam? I'm makingpeach right now but I have had strawberry do it too. Help!

Somebody's mom told me once that you can stop the fruit from rising to the top by turning the jars upside down a couple of times as they cool. I guess the fruit gets trapped somewhere in the middle as the jam congeals. It seemed to work, but I've only had to try it once so that's not really an endorsement.

I sometimes get this if there is too much jelly liquid and not enuogh fruit mixed into the jam part i.e. more fruit makes for less of it to rise to the top

for my strawberry, I remedied this by pureeing the berris rather than mashing I just whirr the berries for 2 or 3 pulses and that's enough to get a great blend

I had peaches and was ready to do the same for peach jam, but ran out of time before we had to leave for vacation.

have been doing it like this for 5 years and people rave about it all the time

sometimes the last bit of berry/juice mixture is out of porportion and the berries still rise to the top if this happens, I just use these batches for hubby';s sandwiches and don't bother selling them a stir or two with a spoon in the jar and its all good

You questioned sparked a memory that I had recently read about this problem. I checked my cook books at home but couldn't find the information I was looking for. I had just checked out (again) the book "Stocking Up" at the library and here's what it has to say:

"If you've stirred your jams and preserves properly before jarring them, you should have no trouble with fruit floating to the surface. If you find fruit floating in your preserves, stir the preserve mixture gently for 5 minutes after removing it from the heat the next time you make them. Also, make sure that you've used fully ripe fruit, that is was cooked long enough, and that it was properly crushed or ground."

I don't think floating fruit affects the quality of the product, just looks odd. So follow Elizabeth's advice to stir this batch and you should be good to go! If you're like me, this will just give you incentive to try it again.

Toto, we're not in Kansas any more!

Yes, it really is the nature of the beast for the fruit to head for the top. Some recipes call for you to totally crush the fruit before cooking it, I never do that, but I suppose it is worth a try. Though I think Elizabeth's solution is an easy one, and if it tastes good, who cares?

Are your peaches too big? Are you using chunks or? Did you bring it to a full rolling boil?

Hmmmm...I assume that you're cooking the jam, not making freezer jam. I've had the same issue with cooking jam and just end up stiring it up when we open the jar and that distributes the fruit and it stays. Hopefully someone else has some ideas for you!
