I've been look for black walnut extract and cannot find any in the stores. I've made vanilla before with a bean and grain alcohol so thought I would try that using black walnuts. Any suggestions/comments/experiences with that?

I would most certainly try it! I woudln't toss them anyway. They'd be delicious in, say, a rum cake or something like that! Yum yum! Let me know how the experiment goes??

Thanks so much Maggie for posting those directions! yea!! I'll have to look for that book. I wonder....I've read when you make vanilla you can save the beans and use them again to make more extract..wonder if you could save the walnuts to for reuse to make more extract.... I'll have to experiment.

OKAY! The book is "Cordials from your Kitchen" by Pattie Vargas and Rich Gulling. They recommend that you toast 1 cup shelled black walnuts, then infuse with 1 cup 100 proof vodka and 1/2 cup bourbon for one month, shaking occasionally. Then you strain out the nuts. If you want to make a drinkable sweet liqueur add an equal amount (or to taste) of simple syrup; if you plan on using the extract for baking, you can use it as-is! Oh man, i think I have to make this now. it sounds amazing!

You can make delicious extracts *and* liqueurs from the nuts! The nuts are quite different from the hulls; Sarah, you want the yummy taste from the nuts, I am sure, not the stuff made from the hulls. I have a great book on liqueurs and cordials that gives great recipes for nut extractions, including black walnut. I'll look it up when I have a sec!

Most extracts are artifically flavored.

Black walnut powder is made by cutting the ripe hulls into small pieces, drying them and then pulverizing them in the blender. Be sure & use gloves otherwise your hands will be stained for a VERY long time.

Sarah, good luck finding BW extract. Have you tried Watkins? Just a thought...

I don't want to use it for medicinal purposes, I was looking to make some for cooking. I bought some from the grocery store about 15 yrs ago, but I don't know if they don't make it anymore or what.

Interesting about medicinal though. Might have to make osme of that too.

black walnut hull powder is also very good for your teeth- gums, and all around cleaning your teeth. I have the kids dip their tooth brush in it and brush with it at least twice a week.

The medicinal Black Walnut Extract that you're trying to make doesn't taste very good. It is used to rid off parisite, etc.
By placing the ripe hulls into a jar, half-ful, and adding vodka to the top. Place a lid on & shake a couple times a day for 3 weeks or more. Strain & rebottle.
The dose will depend on the size person & the strength of the tincture.
Always start with a very small dose, 10 to 15 drops.

You can use the extract in place of using the actual nuts...for instance I like to use it in chocolate chip cookies. The nuts can be so expensive to buy and I fight with the Squirrel-family over rights to the walnuts in my yard! lol

So you would use the green hull and not the actual nut? I don't have the hulls so I'm going to experiment with the using the nut meats crushed a little. Who knows, guess I will find out though.

What do you use the black walnut extract for? Are these the same black walnuts that drop green, smelly nuts in ever vacant lot in the city? Or are those a different variety? If those are the ones, I could make a lot of this...

I have heard that you shred the green hulls, and pour vodka over them in a sterilized jar. Now- I'm not sur how long you let these go before you strain them and use the extract.
