Posted - Jun 25 2011 : 04:54:07 AM My sister makes the cowboy caviar that is corn, black beans, peppers, and italian dressing. She made a huge batch, so can I pressure can some of it? If so for how long? I am unsure since it has dressing in it.

Posted - Jun 25 2011 : 7:06:08 PM I looked up some recipes in Jackie Clay's Canning book (my fav Christmas present this year) She cans lots of things that have oil in them. You just have to can for the ingredient that takes the longest. Probably a toss up between the corn and beans. Be sure you wipe the rims well before putting the lids on. I'd sure be willing to give it a try. =)

Posted - Jun 25 2011 : 5:05:48 PM That's what I was worried about. I would freeze it, but my freezer space is at a premium, so I can most things.
I will try and get the recipe from her. It is so yummy and easy! I am pretty sure it is just corn (she uses shoepeg), black beans, and red and a green pepper, jalapeno pepper, a red onion, and the Italian salad dressing.

Posted - Jun 25 2011 : 06:56:07 AM you can call the county extension agency and they can tell you the processing time and how long. it does need to be a pressure canner not a water bath method. hope it helps you. happy days sherrye

Posted - Jun 25 2011 : 05:55:54 AM Elizabeth, because of all of the beans and corn, it would have to be pressure canned and I would assume for at least 60 minutes. It seems to me that it would make it mushy.
