 Do you have to blanch zucchini before freezing

Last year I did what all the books said and I blanched my zucchini before freezing, only to have it be so tough I could't eat them. I was thinking about grating it this year and freezing in 1/2 cup portions and wonder if I really need to blanch it. Or can I slice them and freeze without blanching (that's what I did last year).

I just freeze it fresh in pre-measured 1 cup grated lumps.

I don't like to blanch as it makes the zucchini mushy from the extra moisture from blanching.

I have never blanched any zucchini I've frozen, and I've not had a problem. :)

I blanched and vacuum sealed them two years ago, but it was such a pain in the butt, mainly because all the extra moisture from blanching made it difficult to get a good seal on the bags. Then my mother-in-law said she never blanches before freezing and it's fine. So last year I just sliced and froze.
When it comes to shredded, I have always just shredded fresh zucchini and put it in regular freezer bags - portioned out for my bread recipe, of course.
So, I say "no" to blanching. Others may dissagree.
