Hi girls!

My hubby is a fudge fanatic, but I have only made it a few times during our marriage. Will you please share your favorite fudge recipes? I would love to surprise him with a big tin of homemade fudge in all different flavors for Christmas! He loves it all - chocolate, peanut butter, maple, panuche, pumpkin - you name it!

Sharon & Annika - I do have your pumpkin fudge recipes, but please post them again here for the girls who might have missed them in the past. :) SO yummy!!!

I have 2 fudge recipes that I will dig out over the weekend. One is my mom's peanut butter fudge and the other is my white chocolate fudge that I make every year for Christmas. They're both yummy!!

Oh Nini.......how sweet and what a stinker :)

When I hand Michael a glass or mug of tea he asks me if I sweetened it. That means did I take a first sip from it :)

Lisa - Those cookies and with penuche icing sound yummy! My hubby is a sweets addict. I don't know how he does it. The older I get, the less sweet I like it. He says that's because I'm finally sweet enough... then in that same breath, he'll smile, kiss me on the cheek and swoop my dessert right out of my hand... Men... LOL!

My step grandma used to make plain sugar cookies with penuche icing. I think my mom has the penuche icing recipe, but not for fudge. I remember having them all the time, to the point of getting sick of penuche, but now, I sure would like one of those cookies to bring back memories!

Hey Nini, here it is. Also I have a recipe for Coconut Creme Fudge that is really good. Not old fashioned though. You know I wonder if Penuche is a NE thing. People out here look at me like I'm nuts when I ask about it. I would love a recipe for Penuche too!

Pumpkin Fudge

3 cups sugar
3/4 cup butter
1 5-1/3-ounce can evaporated milk (2/3 cup)
1/2 cup canned pumpkin
*1/2 teaspoon ground cinnamon
*1/4 teaspoon ground ginger
*1/4 teaspoon ground nutmeg
1 12-ounce package (2 cups) butterscotch-flavored pieces
1 7-ounce jar marshmallow crème
1 cup chopped toasted pecans
1 teaspoon vanilla


1. Butter a 13x9x2-inch baking pan. Set aside.
2. In a heavy 2-quart saucepan, combine sugar, butter, evaporated milk, pumpkin, cinnamon, ginger and nutmeg.
3. Bring mixture to a boil, stirring constantly. Reduce heat. Boil over medium-low heat until mixture registers 234 º. (Soft-ball stage) on a candy thermometer, stirring constantly (about 25 minutes).
4. Remove from heat and stir in butterscotch pieces until melted. Add marshmallow crème, nuts and vanilla. Mix until well combined.
5. Pour mixture into prepared pan, spreading evenly. Cool at room temperature. Cut into squares. Wrap tightly and store in refrigerator. Makes 3-1/4 pounds.


Don’t forget to adjust for altitude! For every 1000 feet above sea level subtract 2 degrees.

*I used 1 teaspoon of baking spice instead.

Coconut Creme Fudge

Ingredients:

1 (12 ounce) bag white chocolate chips
1 (6 ounce) bag flaked coconut
1/2 cup butter
2 cups sugar
2/3 cup evaporated milk
1 teaspoon coconut flavoring
1 (7 ounce) jar marshmallow creme

Directions
1.In large pot over medium heat, cook and stir butter, sugar and milk.
2.Bring to boil and boil for 5 minutes or candy temperature of 230 degrees.
3.Remove from heat.
4.Add marshmallow creme and white chips stirring til well blended and chips are melted.
5.Add in coconut and coconut flavoring.
6.Mix well and pour into greased or sprayed medium baking dish.
7.Cool completely, then chill til firm.

*Use an 8x8 pan sprayed w/nonstick cooking spray.
