Sharing a few of our recipes that we love to make. These do not have a breaded topping, but use one skillet.

One Skillet Lamb Gyros
Topping: 1/2 cup yogurt (we use vanilla, lowfat) and 1/4 tsp. ginger
Mix, and set aside in refrigerator while cooking. You can salt and pepper this if desired.

Prepare vegetables:
2 Poblano Peppers, chopped
1 large onion, chopped
3 cloves garlic, minced or finely chopped
Set aside.

In a bowl, mix:
1 slice of bread, finely crumbled
1 1/4 pounds of ground lamb
1 1/2 tsp. cumin
salt and pepper

Form patties, and cook until firm, about 6 minutes. Remove from pan, and drain off fat.

In the same skillet, add the vegetables you prepared and 1 tsp. cumin. Cook over med or low heat until crisp tender. Break up the lamb patties, into bite size pieces and return them to the skillet. Heat until the meat is re-heated.

Stir in: 1/4 cup chopped fresh, flat leaf parsley.

To serve:
Cut pita bread in half, an fill with mixture, top with yogurt sauce.

You can also use flat bread.

It will be interesting to grow it. I planted from seed, but with all the rain, and now no rain, it doesn't look very good. Several have died already

One Skillet Santa Fe Chicken Fajitas
1 pound boneless, skinless chicken breasts
1 red onion, sliced
1 green pepper, sliced (see note)
3/4 cup salsa (we use homemade salsa)
6 Tablespoons lime juice (fresh preferred)
3 cloves garlic, minced
2 tsp. chili powder
1 tsp. dried oregano (use grow ours, and dry it)
1/2 tsp. ground cumin
1/4 tsp. natural smoke flavoring (optional)
salt
freshly ground pepper
pinch of sugar
1 tablespoon olive oil
Soft tortillas

Cut the chicken into thin strips. In a large bowl, combine the chicken, onions, green peppers.

In a medium bowl, combine the salsa, lime juice, garlic, chili powder, oregano, cumin, smoke flavoring, salt and pepper to taste, and sugar. Pour this mixture over the chicken mixture and marinate for at least 1 hour.

Heat olive oil in a large skillet. Add the chicken and vegetables. Raise the heat to high and cook, stirring frequently, and until chicken is cooked.

To serve, fill tortillas and enjoy. Some liquid may form, from the amount of vegetables you use. Simply drain off before serving.

Note: You can top these with sour cream or cheese, if desired, but the amount of calories and fat will rise.

For our fajitas, we like to add red, orange and yellow bell peppers, and double the recipe. We like to grow our own poblano and green peppers ourselves. Each year we grow new items. We planted cumin for the first time this year, but have not harvested it yet.
