Great northern beans, rice , Ham, cheesy biscuits, and some yummy bread pudding my son made. Oh and left over broccoli cheese soup.

@Anita, I have a couple of variations of King ranch casserole, but they pretty much are the same: chicken, cream of mushroom, cream of chicken, (I use the organic ones now), green chiles, torn up tortillas, chile powder, garlic, and cheese. Grew up on that, total comfort food! Let me know if you end up making one, or if you'd like one of my recipes for it!

Made a big enough one last night I don't have to cook tonight! ;)

LOL, Sharon! He made "Dansk Million-Beouf" which translates to "Millions of Beef". It's cooked ground beef in a brown sauce, with veggies that is served over potatoes. Served with a side of pickled red beets, which we found imported from Denmark, organic! It is so yummy, one of my favorites on a cold night. :)

Hey Sharon,

He uses whatever is in the garden when it's summer, mainly carrots, peas, green beans. In winter, he uses frozen organic veggies: corn, green beans, peas, carrots. No onions, but a little garlic. As for the sauce, let me find out. I'll let you know. :)

Hi Sharon, we finally got a hold of dh's mom to see if she had a "substitute" for the brown sauce base. She says beef broth, flour, garlic, salt, and then DH uses the water he boiled the potatoes in. :)

LOL - I love that, Sharon! "Remains of the Day." I am going to have to remember that next time. It sounds so much fancier than leftovers!!! :)

Last night I threw together cranberry-orange chicken and broccoli on rice. Very yummy. We just needed a little fruitiness for a change.

Tonight, we're having pancakes and bacon! IHop is doing a free-stack fundraiser all day today, but my guys much prefer my homemade pancakes. My hubby saw their commercial last night and said, "Awwww! You should make THAT tomorrow night!" 'Sounds like a plan! I serve up the pancakes with small bowls of apples, dried cranberries, nuts, chocolate chips (a splurge the guys love), and other wholesome toppings on the side, and offer real maple syrup or whatever other fruit syrup we have on hand. Anytime we have them, it feels like a party! I'm getting hungry just thinkin' about it! LOL!

Nini- my kids are begging me to make the sausage and cheese pancakes I recently posted about on my blog. We've also tried a cornmeal one that I will post later, but they loved the sausage/cheese ones.

So much for Spring fever. Thirty plus inches of snow hit us last night. I didn't know if we'd lose power and be on the generator, so I made some goodies just in case: chicken curry salad, chicken broccoli casserole, chili, cornbread, and brownies, all homemade and organic, of course! No more cooking all weekend!

Oh yum! I made a recipe of my grandmother's, Greek-style spaghetti. It's made with carmelized onions and garlic, sweet wine, and cinnamon. Smells like heaven when cooking. So yummy!

Nicole, that spaghetti sounds SOO much like our Cincinnati style chili, which is Greek through & through. Ours has just a hint of chocolate in it as well, but the cinnamon & other spices are SO Cincinnati chili. Some do not understand it, as it definitely does not taste like a traditional chili, but those of us in the Greater Cincinnati area cherish our "Skyline" or "Gold Star" or "Empire", all derivatives of the Greek chili we all love!
Man, it is after midnight, & I am craving a 3 way (chili, spaghetti & chesse, served with oyster crackers!)
