Update on drying carrots. They're not quite done but I tasted them and they are soooo sweet. Too sweet for savory dishes but will be great in cakes, muffins, or pancakes.

Today I am drying 3 lg limes I got on sale 3 for $1.

I checked on the green beans hanging in the Yellow Rose Cottage and they are coming along. I had two strings of the beans but one came undone as I was hanging it. I didn't want to restring it so I laid it out on a basket hanging nearby. It seems to be drying at the same rate as the ones hanging.

If the beans continue to dry the same drying in baskets will be easier for me on days I have trouble with my hands or dealing with MS fatigue. I like having options on how I can do things.

Today it's kale stems to be used in broths. Also celery leaves for salt or in cooking.

Celery, carrots, and onion pre-prepped for drying; parsley & cilantro stems. Will take several days to get it all dried.

Today is grocery shopping day and my E-deal for the week is three 4-bun pkgs of store hamburger buns for 99 cents. Planning on drying them for bread crumbs. Will dry them in cubes. When a recipe calls for fine bread crumbs I can put some through blender, food processor, or my favorite - put in zip-lock bag and smash them with rolling pin.

By drying in cubes I have choices on how to use the bread crumbs but still have only one container in pantry.

I don't know where my mind was when I counted the hamburger rolls - instead of four to a pkg it's eight so I have 2 dozen rolls to dry. I am on my second pkg.

Apple slices for Apple Pie Sunday pie and for dried fruit cake. Gala apples on sale (new crop) and they are beautiful. Not sure if they are a baking apple but I'll give it a try.

Small batch drying today.

Lemon peel from lemon I used when drying apples. When dried I will put through blender for lemon black pepper.

One red bell pepper my sister gave me. It will be good in winter soups/stews.

Sara, how do you cut your apples for drying? Last time I used a spiral cutter but they came out too thin, almost like paper thin. I am thinking of cutting my apples into six or eight slices. Any suggestions?

Jana, I cut my apples into wedges, approximately 1/8" - 1/4" thick. I start out trying to be consisted with the slices but by the time I finish I'm just glad to get it done.

If I am drying apples for crafts I usually slice into circles or length wise - 1/4". Anything thicker takes too long to dry.

Today it's collard green stems and green part of a leek. As soon as I have enough dried mixed veggies I will make vegetable broth.

Sherone I love to smell herbs drying. It's time to harvest my two thyme plants in the front yard. I may hang them to dry in the Yellow Rose Cottage. If I do hang them I will make cheesecloth bags to put the sprigs in to keep them clean.

Been drying lemon basil, now need to do chocolate mint and oregano, perhaps some sage as well. It's raining today and I don't think I'm harvesting these herbs in the rain.

Went through my pantry this morning and I have several items that have missed their due date by a month or it's this month. So, I am drying canned sliced jalapeno peppers, a couple of small cans of pizza sauce.

I'm also dehydrating peppers today. I cleaned out my greenhouse and collected a big bowl of peppers before composting the plants.
