Anyone wan't want to share there favorite cookie recipe?
mine is a
Chewy Chocolate Chiparoon.

2 eggs
1/4 t salt
3/4 cup sugar
1/2 cup sifted flour
1 t melted shortening/butter
1 t almond extract
2 2/3 cups shredded coconut
1/4 cup chopped maraschino cherries
1 6 oz pkg milk chocolate chips
beat eggs and say till fluffy gradually add sugar, beat till thick and lemon colored approximately 5 minutes stir in flour, shortening and almond extract. Fold in coconut,chips and cherries. bake at 325 for 12/15 mi. I like to bake on parchment paper but not necessary.

My favorite cookie recipe is my favorite because it is only three ingredients and cooks in 10min. It is one cup peanut butter, half cup sugar and one egg. Mix altogether and put on cookie sheet in about 1&1/2 balls. Press slightly with fork NS then EW. Bake for 10mins. Should keep a watch because they can burn easily. Let cool a little. Eat 'em warm with icy cold milk. Gotta go and makes some Bye y'all

Can't believe I missed this thread! The following is one of my ultimate cookie indulgences!

Chocolate Espresso Snowcaps

4-6 oz Bittersweet Nestle Chocolatier Chips (I used bittersweet chocolate chips from Aldi this year and they worked great)
½ cup flour
¼ cup cocoa powder
4 tsp instant espresso powder
1 tsp baking powder
1/8 tsp table salt
4 T unsalted butter, softened
2/3 cup packed light brown sugar
1 large egg
1 T milk
½ cup powdered sugar

Place chocolate in a bowl and microwave in 30 second intervals, stirring each time. Let cool. In a medium bowl, sift together flour, cocoa powder, espresso powder, baking powder and salt.
In a large bowl, beat butter and brown sugar until light and fluffy. Add egg and beat to combine. Stir in cooled chocolate. Add dry ingredients alternating with the milk. Mix until just combined. Turn out onto a piece of plastic wrap. Shape into a flat disk, wrap in plastic and chill in freezer until firm, about 45 minutes.

Preheat oven to 350. Line two baking sheets with parchment paper. Pour powdered sugar into a bowl. With slightly damp hands, shape dough into 1 inch balls (about 1 T dough each). Roll each ball in sugar. Roll each cookie a second time to completely coat. (Do in large bowl and leave cookies in as rolled?)

Place on baking sheets 2 inches apart. Bake until sugar coating splits and cookies have spread but are still soft to the touch, 12-14 minutes. Cool on wire rack.

Cookie dough can be made to point of rolling in sugar and then be flash frozen for baking later. Do one test cookie first to figure out the timing needed as baking from frozen will add a minute or so.

You can also bake then freeze!
