My childhood best friend asked us over for New Year's Eve. She requested I bring an appetizer. The problem with that is her dietary restrictions. She has to be gluten, dairy, and corn free. Practically every savory appetizer has cheese in it or is wrapped in some type of pastry dough. Does anyone have any suggestions? I've googled this and didn't find anything that meets all her dietary requests.

meatballs, or can she have goat cheese - if so, you can substitute chevre for many cream cheese based recipes

Maybe lettuce wraps with spicy sriracha etc.

I'm making homemade egg rolls and wontons. Crab cakes are an option. For GF, there are 1 to 1 flour mixes (just make sure they don't have corn) that you can use in place of regular flour. You can also do chicken wings, rumaki, deviled eggs...

Spring rolls would work. Vegie tray with dips is a great idea and you can make a peanut satay dip and lots of other GF and dairy-free dips.
