I looked on the site Sara and they are sold out of a lot of types. You are right-they are expensive-but I think I will try the goat eyes when they are back in stock. Us hillbillies do love our beans and cornbread for sure.

The other day I put up four pints King City Pinks dried beans and this morning I put up four pints of eye of the goat dried beans.

Brookshires has fresh green beans on sale for 79 cents a lb so my sister picked up 4 lbs for me. Tomorrow I hope to put up green beans with baby yellow potatoes.

Today I put up four 24 oz jars of greens beans with little potatoes. I watched a video on U-tube on how to do it. Green beans were cold pack on the bottom and potatoes hot pack on top. Looks pretty in the jar. My first time to can green beans so I didn't pack the beans enough and they floated about an inch. All jars sealed so I am a happy canner today.

I watched Lydia's Italian Kitchen on PBS Create today and she showed how to thicken an oil & vinegar salad dressing. She smashed two hard boiled egg yolks and whisked into the oil & vinegar. She sliced the egg whites and added them to the salad.

Yesterday I put up four 24 oz jars of beef & gravy. It'll come in handy for so many recipes.

I got the recipe from my new canning book "The Complete Guide to Pressure Canning" by Diane Devereaux the Canning Diva. The book is well done with recipes, hints, and serving suggestions. Also a processing chart for all kinds of meats and veggies.

Wow Sara! You've been busy!
I love Lydia.
If I get any time, I will check out that canning book. Work is crazy and I'm going to dog shows a bunch.
Annie does obedience and rally, and puppy Sherman is in confirmation. Fun to hang with dog people.
But my canning and putting up has suffered. I am in dire need of canning some beans, and I have squash and peppers in my dehydrator that have been there a couple of weeks.
I'm pathetic.
I need to comp to TX to learn how to get myself back on track!

Lisa come on down and we can play in my Yellow Rose Cottage. May even get some canning done. Annie and Sherman can play with my Annie in the backyard.

You must be having loads of fun running here and there with Annie and Sherman.

Michelle, I had some of the beef & gravy that didn't make it into the jars so I cooked it on top of the stove and froze it. I tasted it before freezing and thought it didn't something else. Too bland for me. The recipe called for salt, pepper, and garlic cloves. Next time I will add herbs and maybe Worcestershire sauce.

Yesterday I preserved 8 oz fresh ginger in a simple syrup. After drying the ginger on a rack for 12 hours I rolled it in sugar. This morning I had the simple syrup in my morning tea with lemon. Very good. I have two cups of the syrup so I will be enjoying it in my morning tea for many days to come.

Got the pressure canner out on New Years Eve. Canned 12 pints of carrots and 14 pints of black beans. My kitchen is sort of back together, and finally useable. Those carrots needed to get done, only threw out some. I hope to get some chili beans going soon, and the rest of the black beans that I have. Will have to use quart jars, as I am about out of pints again.

Michelle I don't know how I missed your post but I did. Good work!!!

My great nephew gave me a jar of Trader's Joe black garlic and it's so good. This morning I used it when I sauted each a lb of ground pork & ground beef. Both are flash freezing in the freezer. I cook for one so it's handy to have cooked ground meat in the freezer to use in single serving recipes.

oh definately Sara, Dividing up that pound of hamburger or what ever, into prepped ready to make meals. Today was my canning day again. Chili beans, the leftover black beans, and some leftover great northern. 15 quarts of chili beans, 3 pints of black beans, and 4 quarts of great northern. Only one jar did not seal I think that is pretty good. I had my pressure canner and my sons going today. Did two canners at once, and then one more canner full. Took most all the morning, but glad I am done. I do have another 8 pounds of pinto beans, and 4 lbs of black beans, but they will wait. Got plenty now.After a short nap, I made mozzarella and butter tonight. I did grab a apple pie filling jar and made a small pie. The recipe was MaryJanes, and it was good!! CAnned it from my apples this fall. Planning on taking it easy tomorrow! lol

Michelle you rock as a canner. I too like to have my home canned apple pie filling handy in the pantry.

Saturday American Test Kitchen on PBS made turkey burgers and added pickled avocados. I checked out their pickled avocado recipe and others on-line. I settled on one I liked and made a pint. Had a few of the slices today and it's very good. In a couple of weeks I will make another jar. Shelve life is up to two weeks in fridge - depends on how firm the avocados were. You use under-ripe avocados.

I haven’t been doing any canning but last night I made my first ever batch of peanut butter bars. Since it hasn’t even been 24 hours since I have made them and they are already half gone, I think it’s safe to say my family loves them! I got out my husbands family cookbook and decided to make some recipes from it. The peanut butter bars are from my sister in law. Tonight I will be making his mom’s cheddar chowder and bundt bread. Fingers crossed that this one is successful too!

Way to go Krista. I am sure your next meal will turn out great. Remember practice makes perfect, lol and I am sure your family won't mind you practicing. Sara, enjoy your avocados. That is something I just don't like. Pickling is a great way to make them last longer for sure.

Thanks Michele. The family said they loved the soup. I will have to start making it more often, especially on the cold nights. Now I’m wanting to try another recipe. I’ll have to flip through the book again and see what’s next!

Krista, I did that same thing when my family was young. I would go through my cookbooks and try a new recipe. Found a lot I liked and some not so much.

Forgot to add, I did make my first soup, that had alot of flavor and was good. Normally my soups are not very good. I made Turkey carcass soup. That was after Thanksgiving. Oh my gosh that soup had so much natural flavor, wow. Next time to do it, I want to make the stock and then can it as a soup. Adding the ingredients in the jar and pressure canning.

I made pesto this weekend. It was my way to taming my invasive basil plants! Love them but they are a challenge to keep up! The Pesto recipe came from the book Preserving Italy by Domenica Marchetti .. a gift from a wonderful farmgirl!

Thankfully pesto freezes well! Cheers!
