It was a wonderful day---if only I could grow younger. Tonight my husband is making a pizza. Thank God he was a cook in the army and loves to cook---I cook but I really don't like it much---even though I excel in cooking skills---LOL. Self learned for forty years and proud,

Have Martha Stewart's baked beans in the oven. Should be ready by suppertime. You know it's going to be good when it has a large onion studded with 12 whole cloves. Love poking whole cloves into anything. Recipe called for salt pork but I used a slice of my sister's Christmas ham and bacon instead. Her ham was so good and ham is not one of my favorite things.

I made a curried cream butternut squash soup with coconut milk and garnished with cliantro. I'm not partial to squash but it was amazing and I'll be using this recipe again!

I see I am the first to post here this year. I hope it isn't going the way that other topics have gone.

Today I made meatloaf - one of my favorite things but I never make it the same way twice. Today I made it with a half a jar of Puttanesca; Italian seasoned breadcrumbs; and surrounded it with quartered potatoes and fresh parsley. Turned out really tasty. Had for lunch today; lunch tomorrow and freeze the rest.

Hi Sara,
I didn't make it tonight but the other day I made express cooker spaghetti with toaster oven breadsticks. Using my EC makes it so easy and tasty. Because I don't eat beef and hubby says beef is the only meat that should be used in sketty we make our own. HIM-brown the meat in a skillet, boil the noodles in another pan, strain the noodles in a collander into another pot then mix it all together. Lets count 4 pots or pans. ME - saute onions and garlic in the EC, add ground turkey or chicken and brown, add broth or water for pressurizing, add uncooked noodles in kriss kross pattern, pour sauce over noodles, close lid and cook for 8min. Lets count - one. I get to relax after my one pot cleaning and enjoy sole possession of the remote.

Nancy your spaghetti sounds soooo tasty and one pot cooking makes it even better. I'm all about easy clean up. I made my meatloaf in a tinfoil pan.

I also made orange Jell-O with fruit cocktail - hadn't had fruit cocktail in years. I used 4 paper coffee cups and put 1/4 cup of Jell-O in each - covered with Press n/ Seal. Makes for a handy snack with no cleanup except for a spoon.

I forgot to add I do use store bought sauce. I do like to make sauce from scratch but until I get moved and settled I won't have a garden and fresh tomatoes.

hubby and I are going to brave the roads and head into Spokane..run errands and hopefully hit Post Falls (Idaho) to puruse the "pickin Post Falls' hand craft show. So if we take our lil dog with us, it will be Drive-thru,,, but if she stays home, We will stop and enjoy a 'restaurant meal... either way, I wont have to cook! Yeehaw!

Sounds really good, Sara.

I don't know what hubby will make tonight. I am at work, and he's home. Last night, he smoked some bacon with brown sugar and it was soooo good. He watches BBQ Pit Boys on YouTube and he has been smoking everything lately. Ha! No complaints from me!

I am making a German Bake Over recipe that I found in one of the posts here in the Farmgirl connection. It sounded so good and I had everything to make it. Thank you to whomever posted it. :)

Enough to make 4 cups, then a Bake Over crust made with Mary Jane's Budget Mix. I have tried to make my own mix making the recipe in the Idea Book but it didn't even compare to the yummy goodness of hers!!

Katherine, that sounds really really yummy.

I made another successful express cooker meal. I made chicken tacos. Found the recipe on you tube.
Cup and a quarter of chicken broth in the bottom.
Add trivet then place chicken breasts on trivet.
Sprinkle packet of taco seasons over chicken.
Cook for 30min on poultry setting.

After cooking quick release and shut off EC. Take chicken out put in bowl and shred. Put chicken back in EC IN the broth and put on saute setting low. Prepare your fixins such as grating your cheese, chopping your onions etc. The broth will reduce while you are prepping. Fix your tacos and enjoy.

Happy St Patrick Day!

I am making colcannon and chicken. I don't eat pork so Hubby agrees to chicken as long as it is Shake N Bake BBQ. I never made colcannon (Irish mashed potatoes) before. I found out through tracing my roots I am mostly Irish. My BFF is also mostly Irish. She gives me the business for not knowing how to cook Irish. I then remind her we both grew up in Orange County, Ca., only a few miles from the beach and Disneyland and almost 6000 miles from Tipperary.

Just last week I braved a zoo of people to snatch me a discounted Instapot. I am so in love with it. One of the best investments I have made. So far I have made steamed corn, fettuccine Alfredo, and taco pasta. Tonight I will be making a chicken pot pie casserole in it. I'm excited to try it and see what the family thinks! The hardest part has been deciding which recipes to try first.

I like using my crockpot to slow cook a pork loin roast in barbeque sauce. It falls apart and is tender. We then pile it on a roll for a BBQ sandwich along with coleslaw. Yum! Annie

(Hanging head) well...it's been far too long since I have logged on, but am glad to be back logging on.


It's been a bit chilly. I made a wonderful pot of beans from dried ones. Soaked overnight, then rinsed and simmered low all day with fresh garlic, onion, ham (less fat than bacon but adds flavor),kale, bone chicken broth, seasoned with cumin and chili powder. DELISH! Served with corn bread made with almond milk and a strawberry streusel cake on the side. Tonight will be lighter fare after such a feast. Not sure what yet...ideas???

Nicole, Dried beans cooked with kale or another green is one of my favorite things to cook and eat.

Leftover ground beef veg soup for lunch and baked potato for supper. A baked potato with herb apple cider vinegar is my go to supper.

I've made corned beef that I marinated in a brine for days. I've bought corned beef and cooked it with cabbage but to make corned beef hash I go to Libby's corned beef in a can. That's what I'm having for supper.

Oh Sara...your meals always make my mouth water!!

I made a delicious batch of shisk ke bob (spelling?)...hang on...shish kebab...there, that's better. I used chicken and then on separate skewers I used veggies: tomatoes, mushrooms, peppers, onion and pineapple. Made my own marinade using the pineapple juice, molasses, garlic, onion powder, olive oil, salt and spicy steak spice. OH SO GOOD! Grilled and put over rice with a side of baked beans. Had a chocolate tart for dessert that my dd bought for me for Mother's Day.

Tonight it is chilly, so I am making a yummy quiche with a side of cauliflower soup!

I'm doing double duty roast in my cabin tonight big slow cooked roasted Butt with trimmings and heating up the house while it smells so good! Some chocolate drizzle cake for dessert.Spicey Coffee cake with a drizzle of chocolate.#128522;

I made the world's worst meal tonight. I started with some leftover chicken pulled from a whole bird I cooked a few days ago. I took some of the scrapings and sautéed in a cast iron pan, then added the leftover chicken. Seasoned and topped with some leftover mashed potatoes and put in oven. At this point I am thinking sort of a chicken, shepherds pie/sort of pot pie. But I am out of carrots and celery. I looked in the oven and thought it needed something. So I added bread crumbs. Huge mistake. The glue that I had created was getting out of control. So I added some sour cream and a can of mushrooms and stirred it all together. BLECHHH! I warned hubby and called it Chicken Glue. He ate it, bless his heart and he said it was good. It WAS NOT....Filler for the dogs food. Ick. Need to make up for this disaster tomorrow night.

Lisa, my friend, you got my morning going with a laugh. Been there - done that - keep adding stuff to a dish that wasn't going to get any better. Just more to throw away. Remember years ago when I did that and the dog wouldn't even eat it.
