I made two pint and a half jars of sliced lemons and kalamata olives. They are immersed in evoo, oregano, basil and thyme. They have to sit for 4-6 weeks and ferment. My friend who shared this with me says it's from Israe. Has anyone made some?

I will be picking strawberries soon to make jam. There is a farm just about a mile away from my home and you can pick the berries yourself. This is usually the first thing I can. Have you or anyone ever made jam with a sugar substitute? My daughter is diabetic and many seniors in my church are also. I would love to make them some jam but am not sure it will be the same thick texture. Can anyone help me.

Our cherry and apricot trees have blessed us with a lot of fruit this year, which was great since last year the birds got the cherries and we only got 1 apricot! So far - 10 pt. strawberry freezer jam, 18 - 1/2 pt. cherry jam, 21 qt. cherry pie filling, 20 pt. apricot pineapple jam, 9 pt. apricot pineapple butter, 21 pt. apricots. Still have oodles of apricots so I will be making fruit leather and maybe canning apricot puree.

Our canning season, here in Florida, started back in June when our spring gardens matured. My daughter lives on a Hobby Farm and has a large garden. In early June, I made the family favorite bread and butter recipe, Wild Plum Jelly from the tree in daughter's yard, and a few jars of Florida Blueberries and Ga. Peaches. Come later in August, the florida Sand Pears will be ripe and I love to can some in a simple syrup and also make a canned pear relish that has orange juice and zest in it. I have found that using MaryJane's ChillOver powder makes a better tasting jam/jelly because you can use less sugar and cook it longer to allow the fruit flavors to come out. It is so fun to look inside my little Jelly cupboard and see all the jars stacked in there of 2014 garden bounty!

I really appreciated the tips on the canning of chicken, that's next on my list. I hope mine turns out half as nice as the pictures on here.
As a family we started our canning. full steam ahead.
Strawberry jam, strawberry rhubarb jam, mulberry jam, dilly beans, dill pickles. green beans, onions and peppers, hot dog chili sauce, hot pepper mustard. in the freezer more mulberries for jam, sour cherries for jam and juice, blueberries for jam, wild raspberries for jam and juice. when we have a day off from what is on now, I need to empty the freezer. Waiting for apples ( for pie filling, drying, maple vanilla bean applesauce, apple preserves, and crock pot apple butter). Waiting for freeze some peaches. but for now its more beans, dill pickles, and time for corn.
Its a busy time of the year but I am enjoying putting up for winter.
I really want to try to can chicken, and beef, we do pork and venison. And really like how it turns out.

In Montana it takes awhile to get canning season started. I just got my first batches of Huckleberry-Raspberry Jam made. I was wondering if anyone has any canning recipes for red currants that isn't jelly? I was looking at some red currant chutney but all the recipes I have found aren't for canning. I also found that drying them can be great for baking. Anybody have any fun canning thoughts for my currants?

Canning up a storm here now. I made bar-le-duc, or red currant preserves last week. This week zucchini relish, and lots of cherry pie filling. I like to see my shelves filling up.

I am officially exhausted! Our family went peach picking on Saturday.... Which meant canned peaches, peach salsa, peach honey, peach barbecue sauce, and peach butter, along with frozen and dehydrated peaches. Oh and of course we have eaten MANY, and have made peach ice cream and grilled peaches. I think tomorrow night I may make some peach cobbler.

I really do love preserving food, and truly feel blessed for the freshness it the middle of the winter!

For peach honey, you take the peels and pits and cover them with water. You cook them for around twenty minutes, then strain out the juice. Measure the juice and then add that much sugar to it. You cook that until it becomes a honey like consistency. Super yummy and a great way to use the peels and pits, though they do end up in the compost when all is said and done.

So far I have canned a mess of dill pickles, peaches, tiny new potatoes, green beans, salsa, and I froze bags of corn. No garden this year except for tomato plants in pots on the deck; I had surgery for a torn meniscus in June, so that put an end to the garden this year. I have been buying produce at the Amish produce auction and at a farm stand, which has worked out really well! But hopefully I will be back to gardening next year!

Nice job Grace! I wanted to can beans but the rabbits got to the plants. I did start another crop, and I think I'll have beans soon.

So far I've made pickled carrots, garlic pickles, dill pickles and bread & butter pickles. I hope they taste good. For some reason the pic of my bread & butter pickles wont load :(

Blueberry, raspberry, and three berry jams, and dill pickles. Want to can some strawberry jam and mint jelly too. Also will try a recipe I've wanted to do for awhile - green tomato basil spread. I really needs get a pressure canner so I can do more.

I tried something new this year :) Canning fish! We catch a lot of fish (and eat a lot too!) but we usually freeze it, which takes forethought to thaw it :) so tried canning -- turned out great! this was white perch. We'll not can it all, of course, b/c we do love fried fish also :) but we just tried this on fish tacos and it was perfect!

Sheila, I'm impressed with your canned fish. I've done beef and chicken before. Now, you've given me a challenge!

I harvested several pounds of grapes off our vines yesterday. So, I'll be canning grape jelly today.
