Judith, no I don't. I wash, dry, cut in bite size pieces and put in dehydrator. Store in wide mouth mason jars.

I tasted the portabella mushrooms this morning and I like them but I think they need to ferment for at least a week longer. I will taste them again next Sunday. Tasting is the only way I know to do it - a batch is done when it tastes good to me.

Not exactly fermenting but close. I made a quart of apple cider vinegar with fresh herbs - chives, thyme, rosemary, Greek oregano, garlic, and black pepper corns. If you have not made herb vinegar here's the recipe.

Bring vinegar of choice to boil. Pour hot vinegar into quart jar of a single herb or mix of herbs. I have made up to a 1/2 gal of herb vinegar. Will be ready to use in a couple of days. I strain into a pretty jar to keep on kitchen counter. What's left in the quart jar us stored in pantry.

If you want to add a fresh herb to the pretty bottle use rosemary, chives, thyme or any hardy herb. Basil can be used in herb vinegar but it does not hold up so it should not be added to pretty bottle.

It all sounds so good, Sara and Nini. Soon it will be cranberry season, I hope to get a few pounds from a bog about 15 miles away. Fermented cranberrys, do you need special equipment Nini?

Michele - No, not at all. I just put them in a jar with the lid and ring. That's it. Honest. It's so super easy.

So basically, I rinse my cranberries really well and dry them with a towel. I chop them coarsely with a knife, put them in the jar. Add some orange zest, pour in my local honey (I don't always use raw - our local honey isn't designated as raw, but it works just fine), use a long wooden skewer to help the honey down into the cranberries and help remove air pockets, then stick a long cinnamon stick in the jar. That is IT. Then I put the lid on, give the ring a squeeze, put the jar in a shallow bowl - just in case - and wait. I do release the air every couple of days or so, but that's it. It only takes a couple of days and then it's ready for the fridge.

But this lady - I just love her, and everything she has taught turns out to perfection! And her recipe looks a bit more fancy for the table! It's a little more complicated, but not much. I might give it a whirl this year. But the basic recipe I use above is really delicious. It doesn't need anything more. Sometimes simple is easiest, and sometimes easiest is best! ;)

Okay... So this year is my first really big experimentation with fermenting. Right now I've got onions, banana peppers, salsa, dilly beans, tomatoes with basil and garlic to be turned into sauce later... and two huge jars of sauerkraut! SO excited! I am love love loving this whole fermenting process! SO good! I just need a second refrigerator if I'm going to make enough to get me through til next summer! LOL!

Sara that vinegar sounds really good. I just started water kefir today, hydrating the kefir grains. My first attempt at kefir.

Andrea, I've seen recipes for water kefir but have never tried it. Let us know how yours turns out.

Nini, fermenting blueberries is new to me. I'm interested in hearing how they turn out and how you use them.

Will start a small batch of tomatillo & roasted onion relish today. Will leave tomatillos & onions in chunks per new fermenting book, so small pieces won't float and dice when I want the relish.

The apple peels and cores from the apple pie filling I canned this morning yielded 3 quarts to start apple cider vinegar. I haven't had much luck with making it so I hope I have better luck with one or all of the jars. The directions are so simple but the actual doing seems to be hard for me.

Sara, making the apple cider vinegar is easy. Apple peelings and cores packed in a jar, add 1 T sugar for every cup of water. Fill to cover your peelings. Stir or shake every couple of days, and let sit in a dark corner for 2 weeks. I keep the mother that my first batch made and use it every year. Must be 4-5 years now that I have been doing it. I need to do a bigger jar this year, as I go through it.

Oh, I am going to definitely try this! My apples are beautiful and plentiful this year. I will be using the apple peeler to prepare apples for freezing, so should have an abundance to start a ferment. Thanks for the idea!

A month ago I started a 3 - quart batch of apple cider vinegar. I lost one quart to black mold but the other two made it. I strained and bottled it this morning. Don't know what happened to the one quart but so happy the other two were good. I think adding sugar was the key to my success.
