I came across them on pinterest. wash and slice up thin. sprinkle with any flavoring, and dry to crispy like. You do leave the skins on. I slice by hand, put in a bowl and toss them with ranch dressing mix or spices. be sure to use cooking spray on your dehydrator trays and let them dry.

Drying Syrian oregano and oregano today. I prefer the Syrian type. I grow the regular oregano for my sister.

who knows what kind of oregano I have. It has traveled from garden, to garden to who knows how many gardens. A good hardy variety for sure. I am waiting on apples, and got a few carrots to dig. Should get them done now. Maybe this weekend.

Here are some of my Mini Raspberry Cheesecakes fresh out of the oven. It is such an easy recipe. Basically it's a sweet biscuit crumb and melted butter base with a baked cheesecake topping (cream cheese, sour cream, sugar, eggs, maple syrup). You could add any type of berries that you have available.

Drying sage and lemon thyme this morning. I like fresh sage in my beans but I dry some of it for the cold wet winter days that I don't venture outside.

Aldi has butternut and acorn squash on sale - 49 cents a lb in the stores and 55 cents a lb delivered. At 55 cents it's a bargain so I had 7 butternut squash delivered to can. Winter squash is like pumpkin you can pressure can it if you cut it into chunks and do not puree it. I will use most of the canned butternut squash in making chili, stews, and casseroles.

I canned pumpkin last year but it's so high this year so I'll substitute the butternut squash instead. May put up one batch of the acorn squash I bought.

cindy those cheesecakes look delicious. Sara, your getting your canning done. Pumpkin and squash are pretty close to the same flavor, that is for sure. Good luck with those jars popping! Or should I say Pinging. No famous apple pie moonshine this year. We had a late frost, and it took care of alot of the apples. We did not have enough to press. I still have almost 2 quarts of moonshine in the fridge......saving for a rainy day. lol I did have plenty of apples for freezing, canning and eating. I will be drying the fireside variety starting tomorrow I think. I have some picked in the house just did not get to them today. I did get the carrots dug, and froze them. There was not enough to bother canning. Happy cooking everyone!!

Ladies---before you say you hate garlic I must give you this recipe for slow cooker green beans---so good. I never could cook a good green bean before. Put two and a half pounds of green beans in your slow cooker and cover with five cups of chicken broth---I use bouillon cubes. Cook six slices of bacon and dice a large onion. Add a tablespoon of garlic and sugar and two tablespoons of vinegar---salt and pepper to taste. Cook on high until done. You can put potatoes on top. These are delish! I also put in a little bacon grease.

Barbara your recipe sounds delish. Will give it a try the next time I order fresh green beans. I like to add the wee baby red or yellow potatoes.

A little potato trivia: White potatoes have the most starch - then yellow/gold potatoes - red potatoes have less starch. Starch converts to sugar in our bodies so that's why it's important to know the starch content of potatoes. Vinegar sprinkled on cooked potatoes will help in reducing the amount of starch converted to sugar.

You all are so busy in the kitchen. Everything sounds good! Haven't had a chance to do my drying or canning since the move and renovating the kitchen. Hope to be done soon so I can get some things made up soon. I do have my crockpot so will be making my applesauce this year.

Barbara, those beans are sure dressed up cooking em that way. Almost makes me want to try it, but I never have liked green beans lol.. Getting close to garlic planting time. I always plant around Oct 12. Last year I was given some garlic in early May. Some were sprouting, so I thought I would plant a few. Turns out they got just as big as my Oct planted garlic.

Started corning beef this morning. It's a small piece so should be ready by the 21st. Got to remember to turn it in the brine every other day. Cooler weather makes me want to play in my kitchen.

So far this week I've canned Royal Corona, Midnight black, and cranberry dried beans. Hope to put up eye of the goat dried beans tomorrow but it may rain. Looks like rain on Fri too. Won't complain about the rain since we need it.

Sara do you put baking soda in with your beans when canning? I have heard some say it helps with less gas. Not sure if it is true or not. I also heard that home canned beans creates less gas in the body. Beans beans the musical fruit.......the more you eat the more you toot. lol

Michelle, I put baking soda in beans when I cook them, but haven't when I can them, because I didn't know it there would be a reaction or not. I guess I should google adding baking soda to beans when canning.

On American Test Kitchen on PBS I learned that baking soda added to beans help to break down the skin while keeping the bean intact. Ratio of 1/2 to 1 tsp baking soda to lb of dried beans.

As far as canned beans having less gas I have no idea - at my age everything gives me gas.

In one of my canning books the author said to put a bay leaf in each jar to lessen gas. I have done that but could not tell if it helped because of the above reason.

Barbara, eye of the goat bean is a different bean than yellow eye. It's the size of pintos and similar in color but with darker markings. It's one of my favorite beans.

Where do you find all these different dried beans? Do you have a favorite online store to order from? I have never heard of some you mention-but I would like to try some different kinds. We love dried beans.

Most of the heirloom beans are grown in California - some in Mexico. The beans are expensive compared to grocery store beans but I think of them as a meat substitute when I have them several times a week.
