Let's share some hot chocolate/cocoa recipes!

Viennese Hot Cocoa
6 oz chocolate (semi-sweet, 60-70% cocoa)
1 1/4 cups milk
1 egg yolk
Garnish: Whipped cream

Chop chocolate into small bits. Place in heavy saucepan with milk. Heat, stirring frequently until small bubbles come to the surface. DO NOT BOIL! Stir as needed to keep the milk from burning and chocolate from sticking to the bottom. Simmer for 3 minutes, stirring constantly with a whisk to create foam. Taste and add sugar if needed. When the milk looks smooth remove from heat and cool for a bit. Stir together the egg yok and 2 TBS of hot cocoa. Whisk this back into the pan of hot cocoa. Return to heat, whisk constantly to create foam. Do not boil or the yolk will curdle! Divide between 2 cups and garnish with whipped cream.



This one is like pudding:
Cioccolata Calda (Hot Chocolate Italian-Style)
3 tablespoons cocoa powder
1 1/2 tablespoons white sugar
1 1/2 cups milk
2 tablespoons milk
1 tablespoon cornstarch

Mix the cocoa powder and sugar together in a small saucepan. Stir the 1 1/2 cups milk into the saucepan until the sugar has dissolved. Place over low heat; slowly bring the mixture to a low simmer. Whisk 2 tablespoons of milk together with the cornstarch in a small cup; slowly whisk the cornstarch slurry into the cocoa mixture. Continue cooking, whisking continually, until the hot chocolate reaches a pudding-like thickness, 2 to 3 minutes.

I haven't tried it, but the recipe says "Add some Irish cream, cinnamon, and whipped cream for a fun variation."

Yum! So the cornstarch thickens the second recipe? In these chocolate books listed for the badge, I'm seeing Aztecs mixing corn into chocolate to make champurrado which they say is thick, but I'm not sure if it achieves pudding thickness. Globe trotting over to formerly Spanish occupied Philippines, they have champorado, a similar idea but now with rice and a porridge consistency. Food is such an interesting way to learn about geography and history.

Heather-thank you for sharing the recipes. Hot Chocolate and cold weather go hand-in-hand.

Keto Chocolate Pudding recipe that I liquify to make hot chocolate. Unique but it is healthy(lots of protein) and I love it.
In a blender purée the following:
10 hard boiled eggs
I can of full fat coconut milk
1/4 cup +/- cocoa powder
1/4 cup Monkfruit Powder (or sweetener of choice)
pick of Celtic Salt

Hot Chocolate from above:
Combine 1.5 c. of above pudding mixture and 1/2 c. heavy whipping cream into a little pot and heat on the stove. Pour into two mugs and enjoy!
*You may +/- the amount of whipping cream depending on your desired thickness.

I don't know if I could get past the hard boiled eggs to drink it Jeanette! Definitely sounds healthy but those eggs in my drink. Lol

Cindy-I have heard of the cinnamon (like a Mexi-cocoa) but the nutmeg is new to me. I am going to try it.

I wonder if a chai spice would taste good in hot chocolate??? I will have to try that, too!
