Up where our Farmgirl friend Ruth lives in North Georgia, there are lots of apple orchards. Merciers Apple orchard in Blue Ridge, GA. is a great place to visit and I have had the fun of going there with a good friend over the years on several occasions.

Here is me the last time we went apple pickin' there about 5 years ago.

Today, I went to their site to see what was up and low and behold, they have already started their U-Pick Saturdays for the early varieties!! Today in the apple store there they have Ginger golds available. These apples are a yellow green, and delicious to eat and to cook with. I have purchased them many times and totally enjoyed their flavor, firmness and multiple uses.

I wonder if Ruth likes these apples? I know she has been over to Merciers before. If I if wasn't a 9 hour drive to get there, I would be there this Saturday. Inside their store, they also sell this apple cinnamon bread they make there that is just to die for!!

We have the Ginger Golds here now, too. Dad got apples yesterday to make a pie. He did that first thing this morning so the stove wouldn't make the house too warm.

Is there a recipe for MaryJane's pie filling Shannon? I need to get prepared for all the ones coming in. I dry tons of apples in the fall. I love the way it makes the house smell! You know something strange,we can get fresh Macintosh here. I mean we can buy them in the stores but I am talking about the orchards.

Oh yeah, it's a plan, breakfast at Denise's house! I love apple pie, too, but I don't seem to make it very often. Does anyone like apple dumplings? They're very popular in our area, and I would eat them every day if my waistline would allow! :)

Happy Day!

Denise - her pie filling recipe is on page 135 in her Ideabook/Cookbook/Lifebook. it is scrumptious!

As for apple dumplings... I loved them as a kid, but have yet to find a gluten free recipe. I wonder if I can make them using MaryJane's gluten free baking mix. Might have to play :)

I love apple dumplings!! I have made them a few times and to me they are like the perfect single serving that are good either hot or cold.

Yeh, Denise, tell your Dad to make a few of those apple pies because we all want to have breakfast at your house!! And Macintosh apples grow all up and down the East Coast. You are lucky to be able to go to orchards and pick them fresh off the tree. I love their tart and juicy insides.

Has anyone tried an apple called Envy, I found at Safeway? It is juicy, crunchy and just right in flavor.

They used to sell Macintosh apples here when I moved up here but I don't find them as much anymore.

Are they from New Zealand? I noticed that many stores are currently stocking apples from there since most of the US apples are still from last year.

Shannon, thanks. I will look it up in my copy.

Winnie, we can't get Macs here in the orchards. Not sure why and they don't sell them in the farm markets here either.

Darlene, I have never heard of that kind of apple. I like any of the apples that are tart, juicy and crunchy!

Denise, no Macs in your area? Well, I bet there are some other varieties that are just as tasty! In my opinion, since you have Ginger Golds, you don't need Macs. Macs get all mushy when you cook them too so The Gingers are more flexible for use.

I need to ask MaryJane sometime if the photo of the apple pie filling in her Ideas book came from canning the apples on her farm. She is not sure of the variety as the trees were there when she purchased the place. Apparently, they ripen in late July through August which would be prime canning season for that area of the country.

I took a photo of this beautiful Le Creuset apple dish that was on the cover of the Williams -Sonoma catalogue that came in the mail. Did anyone else see this? I think it is the prettiest apple pie I have ever seen! Don't you just love the way they did the lattice with the leaves? Too bad that dish costs $165.00!! sigh.

My goal is to be able to purchase what ever I need/want out of the William Sonoma catalogue and not be concerned with the price! Love that catalogue! Sweet dish!

Several years ago my son gave me a Le Creuset large oval Dutch oven as a Christmas gift. I have always used cast iron skillets and griddles but this is the ultimate. The walls are so much thinner than cast iron. Of course I was shocked when I discovered what he had paid for it. I love it. It is the perfect pot roast or baked chicken pot. My daughter in law told me that her older friend has been using a set for years that once belonged to her husband's great grandmother. When I commented about the price, my son reminded me that the set of super heavy stainless steel that I purchased while he was in high school now sells for almost $2,000, that brought it into perspective. I paid about $400 in the late 1970s.

Marilyn, over the years, I have found Le Creuset cast iron bakeware on blow out sales at the Williams-Sonoma store in Asheville, NC. It happened by pure chance that I was there when the sales happened, but I now own two sizes of those lidded bakeware items and just love how they perform and clean up. If you can get a really good deal, you may not get your favorite color, but you can get a piece of bakeware that will outlive you. Le Creuset is worth waiting and searching for. And the quality stainless steel is off the charts these days!

Well, I didn't pick these apples, but I found them in the grocery store. They were labeled "early" and they came from Washington State. They are a soft apple, a bit tart, but good. I decided to make them in my apple bakers where you just core them out and stuff with chopped walnuts, brown sugar, dried cranberries ( I didn't have any raisins) and my Apple Pie Spice mix. Stuff them, add about 1/4 cup water to the dish and bake at 325 for about 45 minutes or until done. Here is this afternoon's project.

They were so delicious! I ate mine with a spoonful of apple butter on top and my husband used a drizzle of maple syrup.
