Well, given that it's National Oatmeal Cookie Day & National Raisin Day, why not combine them for a delicious Oatmeal, Raisin Cookie recipe. I have shared a gluten-free version here, but feel free to post your favourite recipe for us all to try:-
Banana, Oatmeal, Raisin Cookies 1 cup oat flour 3/4 cup old-fashioned oats 1/2 tsp baking powder 1/3 tsp baking soda 1/2 tsp salt 1/2 cup raw sugar 1/3 cup vegetable oil (I use either Olive oil or Macadamia Oil) 1/3 cup milk 1/2 tsp vanilla 1/2 ripe banana, cut into small pieces 1/4 cup walnuts or other favourite nut 1/3 cup raisins
Preheat the oven to 350F. Combine the first 6 ingredients in a bowl. Whisk together oil, milk and vanilla in a separate bowl. Add wet mixture to dry ingredients; stir to combine. Fold in banana, walnuts, and raisins. Line a baking sheet with parchment paper. Scoop dough onto pan with a small ice-cream scoop. Bake 25 minutes or until golden brown, turning baking sheet halfway through. Let cool on a wire rack.

You could try avocado oil, but I think the flavour might be a bit too strong for these cookies. If you do use it, let me know how it turns out. |

Denise,
I wonder if the Egg Custard pie can be made with sugar substitutes and Keto flours. I have Keto friendly flour that says it substitutes 1:1, but sometimes they don't taste the same. I love custard pies and am tempted to try it. |

LOL! Yep. Sorry - guess I'm not quite up and alert this morning. I guess I missed that it was a premade pie crust. I can make my own with keto flour. |

I use the King Arthur GF 1:1. So easy to use and everything is the same pretty much. My mom used to make custard pies alot. We had alot of chickens for the eggs |

Custard pies are getting more expensive with the exorbitant prices of eggs now. Ed and I are checking with several people we know to see what their egg prices are, however, the prices I've seen from locals on FB are around $5 a dozen. |
