Well, given that it's National Oatmeal Cookie Day & National Raisin Day, why not combine them for a delicious Oatmeal, Raisin Cookie recipe. I have shared a gluten-free version here, but feel free to post your favourite recipe for us all to try:-

Banana, Oatmeal, Raisin Cookies
1 cup oat flour
3/4 cup old-fashioned oats
1/2 tsp baking powder
1/3 tsp baking soda
1/2 tsp salt
1/2 cup raw sugar
1/3 cup vegetable oil (I use either Olive oil or Macadamia Oil)
1/3 cup milk
1/2 tsp vanilla
1/2 ripe banana, cut into small pieces
1/4 cup walnuts or other favourite nut
1/3 cup raisins

Preheat the oven to 350F. Combine the first 6 ingredients in a bowl. Whisk together oil, milk and vanilla in a separate bowl. Add wet mixture to dry ingredients; stir to combine. Fold in banana, walnuts, and raisins.
Line a baking sheet with parchment paper. Scoop dough onto pan with a small ice-cream scoop. Bake 25 minutes or until golden brown, turning baking sheet halfway through. Let cool on a wire rack.

You could try avocado oil, but I think the flavour might be a bit too strong for these cookies. If you do use it, let me know how it turns out.

Denise,

I wonder if the Egg Custard pie can be made with sugar substitutes and Keto flours. I have Keto friendly flour that says it substitutes 1:1, but sometimes they don't taste the same. I love custard pies and am tempted to try it.

LOL! Yep. Sorry - guess I'm not quite up and alert this morning. I guess I missed that it was a premade pie crust. I can make my own with keto flour.

I use the King Arthur GF 1:1. So easy to use and everything is the same pretty much. My mom used to make custard pies alot. We had alot of chickens for the eggs

Custard pies are getting more expensive with the exorbitant prices of eggs now. Ed and I are checking with several people we know to see what their egg prices are, however, the prices I've seen from locals on FB are around $5 a dozen.
