Posted - Aug 07 2010 : 07:42:03 AM I have never been able to grow carrots, our soil has mostly clay so the carrots don't grow. This year I made two raised boxes 8' x 4' and planted carrots. Yesterday I harvested 40 lbs from one box and now I am pressure canning them. I'm so happy they worked and I only threw out three carrots that were split and misshapen. It is so exciting to finally have carrots through the winter that I know where they come from. Loving the harvest.

Posted - Aug 07 2010 : 9:54:49 PM How deep are your raised beds? I would love to plant a patch of carrots now for a fall harvest, just not sure if my raised beds are deep enough? Posted - Aug 07 2010 : 8:20:24 PM Siobhan, you can keep the deer off your garden by hangin bars of dial soap around the garden. Just drill a hole in the middle and hang it by a string from a stake or branch pushed into the ground.

Posted - Aug 07 2010 : 6:52:02 PM I haven't taken any pictures but the jars sure look pretty sitting on the counter cooling down. Tomorrow I am making antipasta (spelling) and apple pie filling and then monday I am pickling cukes. Busy time of year but very satisfying.

Posted - Aug 07 2010 : 2:43:15 PM Wonderful! Stinkin deer at my carrots I planted this year. I also have raised beds (square foot gardens, actually). I made them extra deep (almost 12 inches) just so my carrots would work out. Well, I think they were doing great, but I never got to harvest them as Bambi seemed to want to do it for me LOL! Did you take a picture of your big harvest? If so, I'd love to see it!
