I recently posted a recipe for my favorite "pumpkin" pie - I make it with Butternut Squash or you can use pumpkin or a nice yellow pumpkin-like consistency squash. I usually cook up a big squash or two and use the leftovers (at least 2 cups) to make a pie. Yummy
