In August when its hot I always like cucumber sandwiches. Bread, butter, cucumber slices and pepper. Or quick pickled cucumber- sliced cucumber, tsp sugar, and vinegar (I prefer malt or balsamic) in a bowl.

One treat I have had at a party that was pretty good was a slice of ham spread with cream cheese and then a pickled asparagus was rolled up inside. Looks nice on a plate, and I am sure there are other pickled veggies that could be used.

We always have fruit and vege platters. If you have the money, buy premade, if not, make your own. You can use canned fruit as well as fresh.

Also there is almost always a fruit pizza at every function in my family. It's a batch of sugar cookie mixed up and spread and baked on a pizza pan or cookie sheet. Then blend cream cheese and powdered sugar to your taste, I add a bit of vanilla too. Then spread it on the cooled giant cookie. Then put fruit on top, as if it were the pizza toppings, and sprinkle on shredded coconut, as if it were the pizza cheese, but much less of an amount.

We always use canned peaches, canned orange slices, grapes, halved strawberries, and fresh blueberries. It's a huge hit and so simple.

You might also think about sandwich roll-ups. Just throw some lettuce, lunch meat, and cheese onto burrito wraps, rollup, slice into 2,3,or 4 sections, then serve. You can mix mayo and ketchup with a dash of mustard and call it dipping sauce! I have done that many times and never told my family. I get requests on a regular basis for my dipping sauce and I always make it for them. I keep my secret and they think I'm a genius!!!LOL!

In years gone by, my family always made cream puffs for showers. Filled them with egg salad, or tuna salad.

I got this recipe from Rachel Ray and it was a hit! Very simple!

Twinkle twinkle Little Star Tea Sandwiches

Ingredients

15 radishes, shredded
1/4 cup finely chopped fresh dill
1 stick plus 2 tablespoons (5 ounces) butter, softened
Grated peel of 1/2 lemon (about 2 teaspoons)
1/4 teaspoon pepper
1 1 pound loaf sliced whole wheat bread (16 to 18 slices)
Salt
Directions

In a bowl, toss the radishes with the dill. In another bowl, stir together the butter, lemon zest and pepper. Spread the lemon butter on one side of each bread slice; cover with the radish mixture and sprinkle with salt. Using a 2 1/2- to 3 1/2-inch star-shaped cookie cutter, cut out the sandwiches. Refrigerate for 1 hour.

Enjoy!
