Posted - Aug 16 2008 : 9:34:25 PM Hello! I just joined today! I can tell I'm going to love it here. I'm a home schooling mom who lives just outside of Knoxville, TN. We only have an acre but make the most of it. Our wonderful neighbors have given us permission to use their pasture to grow corn. So far this week I've put up 24 dozen..... and more to go! Stop and say 'Hi'. Looking forward to making new cyberspace friends. Blessings! |

Posted - Aug 20 2008 : 11:19:36 AM Actually I decided to forego the canning thing this year. My dh took me to the Bass Pro Shop where we bought a FoodSaver Vacuum Sealer. I absolutely LOVE IT! We have two freezers (one box, the other an upright) so I have no problem with storage space.....for now anyways . Our two older kids did all the sealing. They had so much fun ~~~ they wouldn't let me near the thing! . I canned my green beans but that was before we purchased the sealer. I'll definitely seal them next year. I'll save my jars for jellies, jams, & salsa.
I also put up 2 bushels of peaches with the sealer.

Corn on the floor, corn on the table, corn juice on your arms, corn in your hair, corn on the dog.........lol. But then you have all that great corn come winter and it's worth it. Woohoo for you!
