I just joined and I'm excited to 'meet' you and be here. One of the reasons I joined today is because I'm trying to figure out how to can tomoatoes! Right now I have 2 huge bowls of peeled tomatoes ready to be made into sauce or just canned as is. Does anyone know if this is an appropriate question for this forum? If so, can anyone guide me to the right section?

Posted - Sep 06 2010 : 3:26:58 PM Hello Laura fron Michigan. I can't add anything to the canning discussion. My crop this year wasn't as fine as last so I have been freezing. I peel and freeze them whole or cook them and freeze them as stewed tomato. Hope to have a better crop next year, but good luck with yours. Rebecca

Posted - Sep 05 2010 : 1:26:17 PM A big Wisconsin hay dare to ya Laura! We are so glad you joined us. I can my tomatoes by smashing them with a potatoe smasher while they are in the big kettle. Then I add 1 tsp canning salt and 1/2 tsp citric acid to the quart size jars that have been sterilized in my dishwasher on high heat cycle. I fill the jars, leaving a good 1/2 to 1 inch headspace and wipe rims clean. I then place the lids that I have simmered in some water on the stove and screw on the bands till just hand tight. Process in water bath at full boil for 20 minutes, remove canner lid and let them sit in the water for 5 minutes. Remove jars after the 5 minutes and sit on counter and do not disturb for about 12 hours. Crushed tomatoes are easy to use for sauces or chili. Be careful, if you add too many low acid ingredients such as onions, peppers, celery...you will have to pressure can them. I just add that stuff later according to what I am making.

Posted - Sep 02 2010 : 08:51:15 AM Welcome Laurie from Va. you must add lemon juice to your canning jars. @ tablespoons per jar after they are cleaned. I put my tomatoes in large mouth jars and put them in whole. We use them for every thing. Make sure when you put your lids on the jars to wipe the inside top and out side down so they will seal proper. If there is anything juice, seeds anything on the rims they will not seal also make sure none of the jars have cracks etc. When you process them you just need enough water to cover the tops when the water is boiling, that is also when you start timing. Some times the jars will not seal until they are out of the water and cooling. Good luck and you will get it. Lilly

Posted - Sep 01 2010 : 12:57:48 PM We have a kitchen section but I can help you. I usually run mine through the food processor & then cook them down for about 20 minutes to get rid of the excess water. I get my jars cleaned & ready-fill to 1/2 in below rim-put lid & ring on & tighten-boil in a water bath for 40 minutes. By the way welcome !!!!
