I am starting my journey to change from a farmgirl wanna be to a farmgirl..I have just found MJ's site and fell in love with the site.
My path is just starting with learning to prep for winter..I bought a Excalibur dehyrator and have done lots of apples along with trying canning.
I hope to have a garden someday.
The planning stages have just began but always looking for new input..

Melissa, I think the dehydrated potatoes turned out well. I've tried 2 different ways. The first way, I sliced the potatoes about 1/8" thick (thin) and Fresh. They turened out ok, but take a long time to cook. The second way is the way I will keep doing it. I boli whole, unpeeled potatoes until a bamboo skewer can be poked through it, but not easily. I put the cooked potatoes in the fridge. The next day, I slice or shred them and then dehydrate them. They cook much better this way, and since they are cooked, you don't need to use the Fruit Fresh. Since I don't have temperature control on my dehydrator (it just has an off and on switch) I have no idea what they dehydrate at. Also, If I am doing slices, I lay them side by side as close as I can. For the shredded ones, I just spread a layer about 1/2" thick. As they dehydrate, they get smaller. Since I have to rotate my trays, I spread out the shredded potatoes when I rotate the trays. I store them in ziplock bags. If I take the slices off as they are done, they are the color of store bought ones, but if I wait until the whole batch is done, they turn a little yellowish, but tase just fine.

hello Laura,
I have never heard of drying potatoes. How have they turned out? Have you ever tried to dry sweet potatoes?
I have been so busy with the farm house and many gardens and new orchard that I didn't get any drying done. Only the easy herbs.
I would love to try the potatoe's as I have so many this year |

Welcome, Lisa. i am also a newbie here. Do you like your Excaliber? I haven't made up my mind between it or Cabela's big dehydrator. I am busy dehydrating potaoes right now. I have on old DAK. Rotating trays gets old.
