Posted - Jul 24 2008 : 3:54:43 PM Help - how do you freeze corn on the cob? I have cleaned it and parboiled it before wrapping each ear in plastic wrap and freezing it. It tastes soggy and looses flavor. Last year I vaccum sealed two wrapped ears before freezing. Also somewhat soggy, but more flavor when cooked. It has been suggested freezing uncleaned, but then you get worms, etc. It has also been suggested pulling the husk down, removing the silks, bugs, etc. and then pulling the husk back up over the ear, placing a number of ears in a plastic bag and then freezing. I would love to hear how you do it. I will be getting several dozen ears soon. |

Posted - Jul 25 2008 : 11:48:10 AM My grandma told me never to blanch corn. I had always done that and it was always mushy. So now I just husk it, wash it and throw it in freezer bags. It probably doesn't keep as long as if you blanch it, but ours never lasts long enough to find out.
Oh, and when I do cook it...I throw it, frozen, into boiling water and cook it just long enough to thaw it in the middle. Maybe 5-10 minutes?? I used to always overcook it.
Fresh corn, I cook for two minutes, max.
