Posted - Aug 06 2008 : 01:01:33 AM Shirley, my gran and mom never used corned beef, but dried beef (the real salty stuff?), rinsed for what my father termed (rather inappropriately) S*** on a shingle--a mainstay at his post in WWII :) Mom and I loved it, but would only eat it when he was working late :)...can't wait til it gets colder and I can start eating this stuff again!!!
Either way (corned or dried beef), I was always taught to make a good bechamel sauce (cream sauce) for the beef, milk, flour, butter, s & p and off you go. You can adjust your thickness, but I've found that when you add the meat, it helps it along nicely.

Posted - Aug 05 2008 : 7:09:28 PM We love corned beef and I usually cook mine in the crock pot. I put it in early in the day, add the spice packet that comes with it if there is one - if not, I add a little pickling spice, add enough water to come about 2/3 up in the pot, and cook on low heat. A couple of hours later, I add potatoe halves and large chunks of carrot. We love cold corned beef sandwiches with the leftovers, but I would like to try making hash. Thank you for your recipes. Does anyone know how to make creamed corned beef to put over toast or biscuits? |

Hash is my most favorite comfort food, I think, especially with the fried eggs. Or, like I said, you can poach or whatever. I've always eaten it that way.

Posted - Aug 05 2008 : 06:47:12 AM Corn beef is very simple to make...you just buy a brisket or corn beef at the grocers, boil it till tender and then shred or chop it. I've never done it in a crockpot, but it takes about 2 hours on the stove top.
This is my recipe--and I add a little cayenne and s & p to taste--go easy on the salt, though :)
1 lb baking (russet) potatoes, peeled and cut into 1/4-inch dice 1-lb piece cooked corned beef, cut into chunks 1 cup chopped onion 1 large red bell pepper, cut into 1/4-inch pieces 2 tablespoons unsalted butter 1/4 cup heavy cream 2-4 Large eggs--I usually poach or fry till almost "done" and place over the top, then cut in to hash upon serving.
Sauté onion and bell pepper in butter in a large nonstick skillet over moderately high heat, stirring, until lightly browned, about 5 minutes. Add potatoes and sauté over moderately high heat, stirring occasionally, until browned, about 5 minutes. Stir in corned beef and salt and pepper to taste, then cook, stirring occasionally, until browned. Add cream and cook, stirring, 1 minute.
Make eggs in separate pan, serve on top.

Posted - Aug 04 2008 : 1:20:28 PM You can also cook up some corned beef in your crockpot - the only way to make it, I say :-) - and then save some for your hash the next day. Nothing beats a good corned beef dinner and hash the next day for breakfast. Mmmmm.

Posted - Aug 04 2008 : 04:17:15 AM Well, this is how we make corned beef hash at our house. My mother called this Sixth Avenue Hash, she worked in NYC during WWII and used to get this dish for breakfast there.
cooking oil, or bacon grease several cold boiled potatoes i green pepper, diced 1 small onion, diced 1 can of corned beef salt and pepper
I likie to make mine in a big cast iron frying pan, but any will do. Put a tablespoon or so of oil in your frying pan. Heat it up, throw in the diced pepper and onion and cook till slightly brown, Set that aside and dice and fry up your potatoes nice and brown too. Add the corned beef, return veggies to the pan, salt and pepper and cook till nice and hot with a bit of crustiness to it. It is very tasty.
