Posted - Aug 13 2008 : 12:50:46 PM A friend gave us a couple of zucchini's the other day. I made bread today and had two pieces for lunch, warm out of the oven. It was so yummy!! Here's the recipe I used:
3 eggs 1 C oil 2 C sugar 2 C grated zucchini 1 tsp vanilla 1 tsp salt 1 tsp soda 3 C flour 1/2 tsp vanilla
Glaze- 1 C powdered sugar 1/4 C orange juice Mix together until smooth. (Have done before bread is out of oven)
Beat egg. Mix in oil, vanilla and sugar. Add zucchini.
Add salt, soda and 1 C flour. Mix well. Add remaining flour a little at a time until all mixed in. Pour into 2 prepared bread pans.
Bake at 350 degrees for about 45 minutes until golden brown. As soon as you take the bread out of the oven, pour the glaze over it. It will bubble and sizzle. THe glaze adds a great flavor and will help keep the bread moist.
