Posted - Jun 29 2009 : 07:03:18 AM For the first time I used the BALL pectin for making strawberry jam. My dughter and I went to pick strawberries yesterday morning- we picked just under 30lbs- I made two different batches and neither batch set up. I normally use SureJell, but thought I would try the Ball brand. I followed the directions that were listed inside the box- It just didn't turn out, I am so disappointed. I have never not had jam turn out before so this is a stumper! Has anyone else tried the Ball brand of pectin? I did contact the BALL company to see if they had any suggestions on what I might have done- anyone else have any ideas why it didn't turn out? Thanks for the insight! xoxo-Lori

Posted - Sep 06 2015 : 3:31:54 PM I have found that some Jams just take longer to set too. I have had Sour Cherry Jam and Peach Jam take up to a week to set.

Posted - Sep 04 2015 : 10:06:25 AM I've used SureJel a couple of times this year and in both cases I've had trouble with the set. Not sure what I'm doing wrong.
I've also made things with the liquid pectin pouches and those have worked beautifully.
My batch of Blueberry Lime Jam is still sloshing around in the jars a few days later - I put one in the fridge to see if maybe that would help things. So far no luck... :(
Will have to look into this Chillover powder I keep seeing mentioned - I've never heard of it before! |

Posted - Jun 30 2009 : 08:29:58 AM I have never had trouble with getting strawberry jam to set using Ball pectin. I read a long time ago, in Martha Stewart Living, that you should never cut off the white tops of your strawberries because that is where the most natural pectin occurs in the fruit. I do follow the recipe amounts exactly, and weigh my fruit. I tend to balance low pectin fruit with high though in my own recipes (for ex., pears with dried cranberries, strawberries with a whole lemon deseeded and chopped in the food processor for strawberry-lemon marmalade).

Posted - Jun 30 2009 : 06:26:37 AM I made two separate batches and followed the instructions with adding 1/4 cup lemon juice to each batch. I checked them this morning and still runny. I have more of the BALL pecetin if anyone is interested I will drop it in the mail to you. I'm just going to stick with Sure-Jell- it's what hs worked for me in the past and I will stick with that. I alwyas use a squank in any jam/jelly recipe just to keep the fruit from fading....especially the strawberry
And yes, the two recipes from Ball and Certo ARE different as are the packet amounts you use ( 1 vs 2 ) |

that's all I have ever used for the past 9 years worth of jam/jelly canning
grape jelly never turns out though...always a bit runny in the jars |

Posted - Jun 29 2009 : 9:09:22 PM Did you make two 15 pound batches? I have had good luck with Ball, but sometimes it takes a few days to set up. Sometimes really large batches dont set up well.
I would love strawberry syrup. I am hoping a friend will have chokecherries this year so I can make jam and syrup. |

Posted - Jun 29 2009 : 12:23:18 PM I have used alot of different kinds, including Ball..and it worked fine. Sometimes you need to add a little lemon juice or citric acid to the jam to get it to set up..that is usually what causes things to not jell enough..not enough acid.

Posted - Jun 29 2009 : 11:43:18 AM When I give jelly to my sister, they usually heat it up, water it down and use it for syrup anyway. It thins out the sugar and makes is low carb I guess.
Now that Ball has taken over Kerr, I think we may start having problems. Any time I have had a problem with a jar breaking or not sealing, it is always Ball. I don't buy anything but Kerr lids. Now this year they have changed the color and style of the flats. Has anyone used the new flats? |

Posted - Jun 29 2009 : 08:45:23 AM I've only used Ball pectin (it's what's available in my supermarket). I've noticed that sometimes it takes a few days after canning for the jam to stop sloshing around, but usually by the time I open it up to use the jam has set up into the more solid product I expected. |

I tried Ball before too and got the same results. I LOVE Sure-Jel and it is the only brand I use now (except for freezer jam).
I'm sorry that the jam didn't set up, but like Alee said "at least you have lots of Strawberry Syrup. That would actually make really unique gifts for Christmas or hostess gifts.
