I was just invited to a picnic tomorrow for about 25 people. Need a really fast and easy recipe to bring since I don't have much shopping, baking or cooking time!

Posted - May 14 2010 : 10:24:15 PM I often chop up any veges I have around, add onions and garlic and any spices you like, then top with spaghetti sauce. Bake about 30-40 mins in 375* oven. Whala! Vege bake!

Posted - May 14 2010 : 07:16:06 AM I make this a lot and add whatever veggies look good in addition to whats listed. I usually triple this for big parties. It makes a delicious salad for summer lunches.
Israeli ChickPea Salad Ingredients 1 cucumber , seeded and diced 1 green bell pepper , diced 3 large ripe plum tomatoes , seeded and diced 1/4 cup chopped bermuda onions 1 (15 ounce) can chickpeas , rinsed and drained Dressing • 4 tablespoons olive oil • 3 tablespoons lemon juice • 1/2 teaspoon pepper • 1 1/2 teaspoons salt • 4 teaspoons white vinegar
Directions 1. Combine vegetables 2. Wisk together dressing and mix into vegetables. 3. Allow to chill in refrigerator for an hour or so before serving.

Posted - May 14 2010 : 07:04:23 AM I make a great fruit salad that you can whip up in the time it takes to slice/chop fruit and measure a 1/3 cup honey, 1/3 cup fresh mint and 1/3 fresh squeezed lime juice. Refrigerate...and eat!
I use grapes (red and green seedless), strawberries (especially right now, in season), blueberries, kiwi and honeydew, but you can do anything! After slicing/cutting your fruit, put all into a large bowl that allows room to stir. Whisk honey, mint and lime to make emulsion and pour over fruit and stir lightly with spatula and you're done!
