Posted - Aug 06 2010 : 11:10:12 PM Just made some Dilly Beans last week! I snap some beans into bite size pieces for small jars, and use long pieces in the larger, taller jars. The snapped beans fill the jars quicker, with no need to squeeze in the last few to a jar. I tap them a bit on a towel to settle them into the jars, before adding the hot pickling juice.

Posted - Aug 04 2010 : 7:58:00 PM I haven't heard of anyone doin that. I'm not sure if it would change the taste or not. My aunt, our family's cannin queen, says if you don't blanch them they will stay crisp for 2 years if stored in a cool location. I have helped her put up regular green beans that way when she had a huge year. She knows how many jars they need a year and the unblanched jars are marked with an 'x' so she knows to let them stay till last and you still have to cook them longer than normal!

2 pounds fresh green beans, rinsed and trimmed 4 cloves garlic, peeled 8 sprigs fresh dill weed 4 teaspoons salt 2 1/2 cups white vinegar 2 1/2 cups water Directions 1.Cut green beans to fit inside pint canning jars. 2.Place green beans in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, for 3 minutes. Plunge beans into ice water. Drain well. 3.Pack the beans into four hot, sterilized pint jars. Posted - Aug 01 2010 : 07:24:12 AM My recipe is pretty much the same as dill pickles. hot pepper flakes, mustard seed, garlic and dill in the jar. Put in the fresh greenbeans. (I like the long skinny French Filet beans). Cover with boiling equal parts vinegar and water w/salt.Boiling water bath for 10 min. They go great with bloody marys.

Posted - Jul 31 2010 : 8:57:13 PM I have seen tons of recipes for Dilly Beans. Is that what your wantin? It's all over the internet, just google it. I've never heard of pickled though.
