Posted - Aug 11 2010 : 1:13:28 PM I'm new to preserving, and have A LOT to learn. I use a lot of tomatoes in the winter in soups and chili. Is it better for me to can them or would dehydrating them work as well? Are there certain types of tomatoes that are better to use than others? Any guidance would be appreciated! |

Posted - Aug 11 2010 : 1:54:18 PM I prefer to dry a lot of our tomatoes. The cherry ones I slice in half and dry for snacks, all the others I slice and dry for chili, pizza, casseroles, soups or whatever. I use my kitchen shears to cut them, and have never had trouble with rehdration.
